Wheat halwa is an Indian sweet pudding recipe made of three simple ingredients. It is made with whole wheat flour, sugar, ghee. You can also add cardamom powder, saffron for flavor & nuts as garnish.

Ingredients & Substitutes
Whole Wheat Flour
You can use regular wheat flour or chapati atta used for making rotis everyday to make atta halwa. Make sure to use good quality flour that is not rancid for flavorful and fresh tasting halwa.
Ghee Or Clarified Butter
Use very good quality ghee for best tasting flavorful atta halwa. I always use homemade ghee for sweet recipes.
If ghee is unavailable you can also simply melt unsalted butter and use it.
Sugar
I have used raw organic sugar here so used around 1 cup. If you are using regular sugar or granulated white sugar you can use 3/4 cup of it. For sweeter halwa increase the sugar as you like.
How To Make Atta Halwa Recipe
Roasting Wheat Flour
Heat 1/2 cup heat in heavy bottomed pan for few minutes. Add 1 cup whole wheat flour to it.
Mix very well.
Start roasting in low medium flame.
Roast until the wheat flour turns light brown, aromatic & nutty. Lower the flame.
Making Aate Ke Halwa Recipe
Add 2.5 cups boiling water to the roasted flour and mix very well. Maintain low flame and keep stirring continuously until all the water is absorbed.
Now add sugar and mix well in low heat.
Adding sugar will make the flour mixture a bit thin, so keep stirring in low to medium heat until the sugar dissolves properly. Now you can add little ghee.
Now add cardamom powder, saffron and chopped nuts to aate ka halwa
Mix very well thoroughly. Remove from heat.
Serve wheat halwa warm. You can add more chopped cashews, dry fruits like raisins before serving.

Selecting wheat flour
Make sure to select good quality fresh wheat flour that is not rancid. You can use both fine or slightly course flour for this recipe. For more flavor you can also add 3 tablespoons besan or chickpea flour.
Use a heavy pan
Use a very good quality pan for roasting wheat flour to prevent burring. You can use a pressure cooker base, thick bottomed steel or non stick pan for making aate ka halwa recipe.
Roast the flour very well
The key for making super flavorful perfect atta halwa is roasting the flour thoroughly. You have to roast the flour and cook till it turns to a deep brown color with nutty aroma in medium low heat. It takes around 8-12 minutes depending on the quantity of the flour used.
Keep stirring constantly to prevent burning. Roasting the flour until it turns dark brown is the key step for making atta halwa with nice aroma.
Using Jaggery
If you wish to add jaggery instead of sugar you may do do. Just add same quantity of powdered jaggery instead of sugar.
Use good quality ghee
Try to use very good quality ghee preferably homemade for making any halwa recipe. It adds so much flavor and a good silky texture to halwas.
To make lump free atte ka halwa
As you add water, the wheat flour will tend to become lumpy. To avoid this lump formation stir continuously in low to medium flame after adding water.
Also make sure to add boiling hot water. Instead of adding water you can also make a thick sugar syrup and add. Just make a thick sugar syrup with 3/4 cup sugar and 1/2 cup water, no need to check for string consistency.
