Aval alos known as poha or rice flakes or parched rice is one common ingredient used in Indian cooking. We use aval on both sweet and savory recipes like poha idli, aval upma, kanda poha, masala poha, poha chivda recipes. This aval laddu and aval kesari are common sweets made with poha.
To make aval laddu I have used medium thick aval, sugar and cardamom powder. For binding I have used homemade desi ghee. You can also use coconut oil instead of ghee. Even milk can be sued but the shelf life of poha ladoo will be less with milk.
For sweetener I have used sugar in this aval laddu recipe. For healthier version you can use powdered jaggery or palm sugar or brown sugar. I have added a pinch of saffron for slight color.
Serve poha laddu as snack or as sweet in lunch or dinner. Aval ladoo is good for toddlers and kids snack box too. These ladoo stay good for a week when stored airtight.

How To Make Aval Laddu Recipe Step By Step
1. Heat a pan and dry roast the aval/poha till it turns golden and crisp.
2.Grind to a fine powder along with sugar
3. Dry roast the saffron and add to the poha-sugar mixture.
4. Heat the same kadai and add the ghee to it.Once the ghee is hot add the broken cashews and raisins. Fry till the cashews turn golden.
5. Add the fried nuts to the poha-sugar mixtyre along with the ghee.
6. Mix well.The mixture will be somewhat wet and crumbly.Allow it to rest for sometime till it turns warm
7.Apply some ghee to your palms and make laddoos.

1 CUP = 250 ml
Ingredients
- 1.25 cups aval/poha
- 1/2 cup sugar
- 1/3 cup ghee
- 1/2 teaspoon cardamom powder
- 2 tablespoons broken cashews
- 2 tablespoons raisins
- A big pinch of saffron
Instructions
- Heat a pan and dry roast the aval/poha till it turns golden and crisp.
