Pesto sauce is one of our favorite condiments at home. I usually make basil pesto with my homegrown basil leaves. Off late I have been making pesto with cilantro leaves and use almonds instead of pine nuts or walnuts. The flavor and texture of almonds compliments the taste of cilantro leaves.
What is Cilantro Pesto?
Pesto or pesto sauce is basically a condiment served with pasta. Traditionally pesto is made with fresh basil leaves, olive oil, pine nuts, parmesan cheese, garlic.
Here in this cilantro pesto recipe parmesan cheese and garlic are not used. We just use onions, chili and olive oil along with roasted almonds and coriander leaves.
How To Use Cilantro Pesto?
This almond cilantro pesto can be used in multiple ways. I usually use this for making quick pasta, sandwich, braided breads and also to make quick flavored rice.
Also if you ask what goes well cilantro pesto I would say it is a best dip with veggies, even pita bread, toast types.
Cilantro pesto keeps well for about a week in refrigerator. You can freeze it for longer time.
Recipe Notes, Tips and Variations
I have used extra virgin olive oil here. You can even use light olive oil. The key for best pesto is to use best quality olive oil.
For spicier pesto increase the number of green chilies or you can even add a bit of pepper powder.
I have used roasted almonds with skin. You can also dry roast the blanched almonds and use for a smooth pesto.

How To Make Cilantro Pesto Step by Step
Dry roast almonds in a hot skillet or tava for 3-4 minutes. Let cool.
Transfer to a mixer or blender jar or food processor. Blend along with roughly chopped coriander leaves, onions, chilies and salt. Finally add olive oil and blend again.
