Kadamba sambar is a typical Tambram style sambar recipe served in weddings.Kadamba sambar also makes its appearance in music saba canteens. Kadamba sambar is a colorful and healthy sambar made with a truck load of veggies and fresh sambar masala. Usually in tambram weddings veggies like carrot, capsicum, brinjal and pumpkin are added. Drumstick, onions are not added in wedding feast but when I made at home I added both.

To make kadamba sambar recipe I have used small onions, pumpkin, tomato, carrot, bell pepper and drumstick. If you do not have one or two veggies in the above list it is fine. The taste and flavor of this kadamba sambar comes from the fresh sambar masala. I have added coconut in the masala and it is optional.

Serve kadambar sambar piping hot with ghee, steamed rice and any roasted veggie like potato, okra or raw banana.

Step by step kadamba sambar recipe

1.Heat 2 teaspoons oil in pan. Roast channa dal, coriander seeds, dry red chlies, methi seeds, urad dal, black pepper corns until aromatic and golden. I used coriander powder here. Once cooled grind to a smooth or coarse paste along with grated coconut.

2. In the same pan temper with 1 teaspoon mustard seeds and 6 curry leaves. Add small onions and saute well for 3-4 minutes. Add cubed tomatoes and saute for 2 minutes. Add the chopped vegetables and saute well. Add turmeric powder, sambar powder and mix well. Mix well to coat the sambar powder in oil.

3. Now add the tamarind pulp and mix well. Add 3 cups water and cook for 10 minutes. Add required salt.

4. Add the cooked dal and mix well.

5. Add the sambar masala prepared earlier.  Mix well and simmer for few minutes.

6. Add the jaggery and mix well.

7. Simmer for 5 minutes, add cilantro leaves and remove from flame. Serve kadamba sambar hot with rice.

Ingredients (1 cup=250 ml)
  • 1/4 cup well cooked and mashed toor dal.
  • 1 cup cubed mixed vegetables
  • 1/2 cup small onions
  • 1 small tomato
  • 2 tablespoons tamarind extract
  • 1 1/2 teaspoons sambar powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon grated jaggery
  • 1/4 cup cilantro leaves chopped
  • 1 teaspoon mustard seeds
  • 6 curry leaves
  • 2 teaspoons oil
  • Salt
  • For sambar masala
  • 2 tablespoons coriander seeds or powder
  • 2 tablespoons channa dal
  • 1/2 teaspoon urad dal
  • 1/2 teaspoon methi seeds
  • 6-8 dried red chilies
  • 1/2 teaspoons black peppercorns
  • 3 tablespoons grated coconut
Instructions

Recipe Notes

1. Adjust the amount of red chilies and pepper corns as per taste
2. Add veggies of your choice
