This easy recipe of potato fries is just like eggplant tava fry I shared few days back. We like potatoes very much at our home and I make potato fry, small potato roast, potato curry, garlic potato fry, chettinad potato roast, potato podi curry once a week. These potato fries are again a family favorite. Anything with potatoes taste good right?
These potato fries could come handy when you do not want to make the real potato chips involving deep frying. These fries use just around 2-3 tablespoons oil yet they turn out very crispy and light. Just make sure to serve them right away as they may turn soggy on cooling down.
To make potato fries select fresh and new potatoes. You can peel or leave the skin on. It is a personal preference. We like our potatoes fries without skin. I have used minimum spices to make these Indian style potato fries. You can choose to slice the potatoes are even chop them into thin wedges.
This potato fries recipe is simple and quick. I used the seasonings whichever I had handy. I have used a dash of turmeric and chili powder. You can vary the seasoning by using pepper powder, garam masala powder or even chaat masala. To give these fries an entirely different flavor you can try smoked paprika, Italian herbs, rosemary too.

You can serve potato fries as snack or side dish. These fries go well with sambar rice, khichdi, rasam rice, curd rice.

Here is how to make potato fries in simple steps.
Rinse and peel the skin off the potatoes. Slice them into 2mm rounds or thin wedges.
Bring a large pot of water to boil with a pinch of salt. Add the sliced potatoes and cook for 3-4 minutes.
Drain and rinse the potatoes under cold water. Take the par boiled potatoes in a mixing bowl.
Add required salt, chili powder, turmeric powder. Further add 2 tablespoons rice flour. Toss well.
Heat 2 tablespoons oil in a shallow frying pan. Place the potatoes as single layer and cook in low flame for 5-7 minutes. Flip and continue to cook till the fries turn crispy and golden. It will take around 15 minutes of low flame cooking.
