Potato mixture recipe with step by step photos. Spicy, flavorful and very addictive snack with potatoes. Spicy and crunchy potato mixture made with thinly sliced or grated deep fried potatoes, dry fruits and nuts.
This easy snack is something we grew up with, it is made very often at home, usually potatoes are very thinly sliced or grated, the job is much easier if you have a mandoline slicer. Sometimes grating can lead to mushy potatoes, you need to squeeze the excess water, but id use a knife or mandolin, you can cut even thin fingers and potatoes will not turn mushy.
To make potato mixture, I have added fried cashews, peanuts, curry leaves in this recipe. You can add any other ingredients you prefer, such chivda recipes are very easy to make and with very less effort you can make and store bulk amount to serve for guests during festival times.
Sometimes we make sweet and spicy potato chivda just like haldiram’s potato chivda, but I prefer this spicy potato mixture with all south Indian flavor. Potato mixture recipe with step by step photo:
1. Wash and peel the potatoes. Slice into thin fingers with mandoline or grate using grater.
2. Heat oil for deep frying. Deep fry peanuts, curry leaves and cashews. Remove to a plate.
3. Now in the same oil, deep fry grated potatoes in batches.
4. Mix with fried nuts and curry leaves, sprinkle salt and chili powder. Mix well and store potato mixture airtight.

- 2 large potatoes
- 1/2 cup peanuts
- 1/4 cup cashews
- 15-20 curry leaves
- Salt
- Chili powder
- Oil for deep frying

2. You can fry 1/8 teaspoon asafoetida along with curry leaves and add to the mixture.
