It has the perfect balance of spice, tang and sweetness. It is super easy to make, a huge chunk is spent on roasting only.
To make roasted tomato salsa we roast or char the tomatoes along with onions and jalapeño peppers and blend them smooth or chunky with few more ingredients.

What Is a Good Tomato For Salsa?
Roma tomato which is one of the paste tomatoes is best for making salsa or any kind of sauce or condiment. You can also use plum tomatoes.
They are more fleshy and less juicy, thus makes your salsa nice and chunky. However if roma tomatoes are unavailable you can use any variety of tomato.
In this roasted tomato salsa recipe we are cooking or roasting the tomatoes in the oven and to remove all moisture anyways.
For this batch I used home grown tomatoes. I have used a few green tomatoes or tomatillo and it turned out to be so good.
How To Roast Tomatoes?
Using an oven is the easiest method to roast tomatoes. It is a mess free hands free method where the oven does all the job.
To roast tomatoes in oven first of rinse and wipe off excess moisture from the fresh tomatoes and slice them into 1/2. Place the tomatoes on a greased baking sheet with cut side up. Along with tomatoes garlic, onions and jalapenos can also be placed.
Drizzle olive oil generously over the vegetables. Place the baking pan in the oven in broiler mode. Broil for 15-20 minutes or until the tomatoes have that smoky char and some black spots all over. The wilting of the peel is also a sign to go by.
After roasting you can peel the tomatoes if you prefer but I like to keep the skin for the smoky flavor.
What Is The Best Method To Blend Salsa?
It depends on how you like your salsa. If you want to make it super smooth you can use an immersion blender or hand blender.
For a chunky salsa a food processor works best. I like to make salsa a bit chunky so I use a food processor only.
If you do not have both blender and food processor, a mixer grinder can be used. Just use the pulse mode and grind until desired consistency is reached.
How To Make Roasted Tomato Salsa From Scratch?
Rinse and wipe off excess moisture from the tomatoes. Cut them into half. Also peel the outer skin of onions and quarter them. Keep the garlic pods ready.
Grease a baking sheet or baking pan generously with olive oil. Place tomatoes with cut side up on the tray. Also place the onions, garlic and jalapenos. Meanwhile preheat oven in broiler mode set at high.
Place the baking pan in oven and broil for 12-15 minutes depending upon how charred and smoky you want your tomatoes.
Once done let cool for 10 minutes. Remove the peel from garlic.
To make salsa place the roasted tomatoes, pepper, onions and garlic in a food processor jar. Add cilantro leaves, lime juice, roasted cumin powder and sea salt to the roasted salsa ingredients.
Run the food processor and blend the salsa chunky or smooth as required. Taste the salsa and adjust seasoning as required.
Transfer to an air tight jar. Serve as required.
Expert Tips
Tomatoes– fresh in season tomatoes are best suited for this salsa or any sauce recipe. If the tomatoes in the market are not very fresh, go for canned fire roasted tomatoes for best flavor.
Jalapeños– I have used one small jalapeno pepper here. You can add two or even three for spicier salsa. On the other hand you can leave it out too. If jalapenos are not available use any kind of chili pepper or even green bell pepper.
Consistency– consistency of the salsa can be thin or thick, chunky or smooth as you like. Just run the food processor accordingly.
Seasonings– This tomato salsa is seasoned with roasted cumin and sea salt to keep the authentic Mexican flavors. To make it spicier you can also add a dash of paprika.
Serving Suggestions

I use it while making toasts too just like guacamole.
I sometimes stir in a tablespoon or two of this salsa while making Mexican rice.
