Sun dried potato chips recipe with step by step photos. Mid of March (Month panguni in Tamil calendar) is the perfect time for making various sun dried items. Sun dried potato wafers are very popular across India.
I wanted to try some easy appalam and vadam varieties last year itself but missed it. So this year I started with this very easy to make sun dried potato chips and followed with javarisi vadam recipe. I have tasted this sun dried potato chips in friends place and always wanted to make at home. The whole procedure for making this sun dried potato chips recipe at home is very simple. Just three ingredients to make this homemade potato wafers recipe, potato, salt and water thats all 🙂
To make sun dried potato chips recipe at home we need a good sharp slicer. Either a mandoline slicer or hand held chips cutter is also good. Use big and new mud covered potatoes for white and light chips. Dry the blanched chips nicely for 2-3 days. Once done they can be deep fried and seasoned with chili powder.
Serve sun dried potato chips, deep fried and seasoned with chili powder as snack!

Step by step sun dried potato chips recipe
1. Select big new potatoes and scrub the mud throughly. Now pee the potatoes and cut each potato into half. Place the potatoes in a bowl of salted water.
2 Using a good slicer slice the potatoes into thin wafers. Keep a big vessel full of salted water ready. As you slice keep the wafers immersed in the salted water. Once done, let the wafers be in salted water for 45 minutes.
3. Now drain and rinse the wafers thoroughly for 3-4 times, changing water every time. With each rinse, you will the starch getting removed and water is more clear.
4. Now bring a large pot full of water to a rolling boil. Add a pinch of baking soda and salt to it. Add drained potatoes and blanch for 2-3 minutes.
5. Drain immediately and spread as single layer on a clean cloth or polythene sheet.
6. Sun dry for 1-2 days depending on the sun light. Once completely dry and crispy, store in airtight container.
7. To serve, deep fry the required amount of sun dried potato chips and season with chili powder. Serve as snack!
