easy weeknight dinner in 20 minutes
vegan
super quick to make
delicious
better than takeout versions.
Ingredients
Rice– you will need cooked and cooled rice just like for any fried rice recipe. I usually cook the rice in the afternoon and let it cool thoroughly to make broccoli fried rice for dinner.
If you leftover rice, it would be perfect for this recipe. If you are cooking the rice for fried rice, spread the cooked rice on a plate and cool thoroughly.
You can use any type of rice here. I have used white basmati rice this time. For more hearty texture try brown rice instead of white rice. You can also use Thai jasmine rice or regular short grain ones too.
Broccoli– Use fresh and tender ones with dense tight florets. For 2 cups cooked rice I like to use 1.5 cups broccoli florets. You can also use 1 cup if you prefer.
Tofu– We just love tofu in this rice. I always use extra firm tofu that has been pressed for 20 minutes for fried rice recipes. If you prefer crispy ones, you can pan fry or even bake the tofu until crispy before adding to the rice.
Adding a protein component makes the rice filling, hearty and satiating.
Peppers- I have used colored bell peppers here for flavor and crunch.
Greens– I like to throw in some greens in this rice if I have them handy. I have used tender fenugreek leaves or methi leaves. They are slightly bitter and add a wonderful taste and flavor.
Sauces– I have used just two sauces here. My homemade chili sauce and a dash if dark soy sauce. Use good quality naturally brewed low sodium soy sauce for best flavor.
Salt and pepper– As per taste. Use white pepper for mild flavor.
Sesame seeds– I love the addition of sesame seeds in this recipe. They add such a nice crunch, flavor and taste. I have used a mix of black and white ones.

Recipe Notes
Cooking rice- Make sure to cook the rice in such way that the grains are non sticky and separate. Please refer to my post on how to cook basmati rice for more details.
It should be cooked al dente so that while sauteing again with vegetables it does not get mushy.
Cooking broccoli- You can either steam the broccoli and stir fry it with the sauces as I did here or roast the broccoli before hand and add to the other stir fry ingredients along with tofu.
If you like crispy roasted broccoli go for it. I make this rice usually for a quick weeknight dinner, so I take this easy route mostly.
Sesame oil- If available please use sesame oil for this recipe. It adds a wonderful depth and flavor to the rice. Using sesame oil in Asian recipes given that authentic touch usually.
If sesame oil is not available you can use peanut oil or any vegetable oil rather than using olive oil.
Use a good wok– As with any fried rice recipe, please use a good broad pan for this recipe. A Chinese wok would be the ideal choice here. If it is not available use a good cast iron or carbon steel pan for best results.
Cook in high flame– Cook the entire recipe in high flame for best smoky flavor signature to takeouts and restaurants. This holds good for most of the indo chinese recipes.
