This lemon muffins recipe is my go to bake, wen I want to bake something with limited ingredients I have my pantry. This is modified based on my vegan chocolate cake recipe. Are these bright yellow colored lemon muffins just not screaming summer, the color comes from our very own turmeric powder. I was a bit hesitant to add turmeric powder to the batter but it was a hit. A small pinch of turmeric powder just imparts beautiful color without turmeric flavor to these lemon muffins.
To make lemon muffins recipe you do not need any fancy ingredients. You an make these yummy muffins if you have wheat flour, lemon, baking powder, soda, sugar and turmeric powder 🙂 Turmeric powder is optional. I have used whole wheat flour to make tese muffins to make them healthier.
Serve lemon muffins as snack with milk or juice. To serve as dessert you can do any simple frosting or serve with some sweet sauce. These lemon muffins make an excellent light summer time snack.

Step by step lemon muffins recipe.
1. Preheat oven at 180C. Line a muffin tray with liners.
2. Take, sugar, water and lemon juice in a mixing bow. Stir and mix very well. Add oil and turmeric powder to it. Mix thoroughly.
3. Sift wheat flour, salt, baking powder and soda over the wet ingredients and mix well. Spoon in the batter in the prepared tray. Top with dried berries if required.
4. Bake in preheated oven for 15-18 minutes. Serve lemon muffins warm or cool thoroughly to frost.

- 1/2 cup sugar
- 1/2 cup water
- 1/4 cup lemon juice
- A pinch pf turmeric powder
- 1/2 teaspoon lemon zest
- Dry ingredients:
- 1 cup wheat flour
- 1/2 teaspoon baking powder
- A pinch of baking soda
- A pinch of salt.

Notes
2. Avoid adding vanilla.
3. Instead of zest you can add lemon essence.
