This super easy to make mango rava cake was on my list last year itself but I missed making that somehow. So yesterday when I prepared mango puree for some other recipe, I made an extra cup and baked this gorgeous mango rava cake. yes the only task involved in this mango rava cake recipe is making the mango puree. Once that is ready just dump all the ingredients in a bowl, rest for sometime and bake 🙂
To make mango rava cake recipe we need just few ingredients. Rava, mango puree, oil, sugar, salt and baking powder. Yep that’s it. I have used rose essence and cardamom powder for flavor. You can even use vanilla. This is a vegan mango cake recipe. The fruit puree just makes the cake so so soft and moist, there is no need for milk or condensed milk.
Serve mango rava cake warm or at room temperature.

Step by step mango rava cake recipe.
1.Puree mango along with 3/4 cup of sugar. The puree should be thick and measure 1 1/4 cup.
2. Take oil, mango puree and rose essence in a mixing bowl. Mix well.
3. Add rava, baking powder and a pinch of salt and mix very well. Let the batter rest for 20 minutes. Preheat oven at 180C
4. Pour the batter into a 6 inch round cake tin and tap well. Bake for 30-40 minutes. Slice and serve mango rava cake once cooled.

Can you use canned amarus if mangoes are out of season? Would you still add same amount of sugar in that case?
