Indian honey cake is one of the most popular snacks from local Indian bakeries. If you have ever visited Iyengar bakeries you will know how popular their nankhatai, butter plain cake, veg puffs, veg rolls, coconut cookies, spicy buns are.
This Indian cake was our favorite growing up. Whats not to love about juicy and delicious cake topped witha generous layer of jam and finally adorned with coconut flakes 🙂
What Is Honey Cake?
Honey cakes are popular all over the world. There are many ways this cake is made. Some popular honey cake varieties are
- Russian honey cake
- Indian style honey cake
Here I am sharing the recipe for Indian bakery style eggless honey cake recipe. It is basically a vanilla sponge soaked in sugar syrup and glazed with jam.
Indian Honey Cake Method
In most of the bakeries no honey is used to make honey cake. The sugar syrup is a simple syrup with sugar and water. The cake get its name just because it is sweet as honey:)
However I have stayed true to the name by adding some honey to the sugar syrup. Please note that you should not add honey to hot sugar syrup or heat honey. Honey should never be heated. So let the sugar syrup cool down to room temperature before adding sugar syrup.
After soaking the cake in sugar syrup, a glaze is applied on top of the cake. It is usually a jam. You can even make a honey glaze.
Finally desiccated coconut flakes are sprinkled before serving.
Serve honey cake as snack or dessert. You can even serve this cake chilled.
Honey Cake Recipe Ingredients:
The base cake is my eggless vanilla cake recipe with butter. Though oil based cake is used for soaking I prefer the taste of cakes with butter in this recipe.
You can use plain flour or whole wheat flour for making the cake. You can also use a mix of plain and wheat flour. Also note that using only wheat flour will make your cake a bit dense but healthier.
You can also use this eggless orange cake or tutti frutti cake as base recipe.
Next use soft room temperature butter. You can use salted or white butter.
For glazing I have used my homemade strawberry jam. Another popular and tasty option is pineapple jam. You can however use fig jam, mango jam also.
Use desiccated or freshly shredded coconut flakes for topping. Even sweetened or caramelized coconut flakes can be used.
Some Tips For Perfect Honey Cake:
Make sure to cream and mix the wet ingredients very well for a soft and light cake.
You can use wheat flour instead of plain flour
Use a correct sized pan for perfect cake.
You can store the leftover cake well covered in refrigerator. Keeps well for 2-3 days.

How To Make Honey Cake Recipe Step by Step
1.Take condensed milk, butter and vanilla extract in a mixing bowl. Mix well and cream well until the mixture turns fluffy and light.
2. Sieve together flour, baking powder and soda in another mixing bowl.
3. Now add dry ingredients part by part to the wet ingredients. Add milk slowly and make a thick lump free batter.
4. Preheat oven at 170C. Grease and line or dust a cake tin. Pour the prepared cake batter and bake for 35-40 minutes.
5. To prepare the sugar syrup mix 3/4 cup water with 3/4 cup sugar. Mix well and bring to a boil. Cook for 2-3 minutes. Once the sugar syrup is thick remove from flame and add rose essence to it. Once the syrup is warm add honey and mix well.
6. Cook the jam in low flame for 1-2 minutes to make it spreadable.
7. Once the cake is done, allow to cool it thoroughly. trim the edges if needed
8. Take a big tray and drizzle 1/8 cup of sugar syrup over it. Tilt the tray well. Now place the prepared cake on the tray.
9. Pour the remaining sugar syrup over the cake and let the cake soak the syrup well.
10. Now spread the jam evenly in top. Garnish with coconut flakes. Slice and serve honey cake as required.

1 CUP = 250 ml
Ingredients
For base Cake
- 2 1/8 cups all purpose flour
- 1 tin / 400 grams sweetened condensed milk
- 1/4 cup butter
- 1/4 cup curd
- 1 cup milk + 2 tablespoons more if needed
- 1 teaspoon baking powder
- 1/8 teaspoon baking soda
- Vanilla extract
- Salt
Sugar syrup for honey cake
- 3/4 cup sugar
- 3/4 cup water
- 2 tablespoons honey
- Rose essence
Glaze and topping for honey cake
- Jam as required
- Coconut flakes
Instructions

Notes
2. You can use any flavored jam.
3. Do not cook the jam for long time. It should be just smooth and not runny.
4. For a more juicy and sweet cake make sugar syrup with 1 cup sugar and 1 cup water
