What Is Masala Puri?
Masala Puri chaat is basically an Indian street food from south India. It is prepared by mixing deep fried crushed pooris with a spicy gravy made from dried white peas. Making dried white peas gravy is similar to ragda patties but the taste of the both chaats is very different.
Making masala puri is easy compared to other Indian chaats. Unlike other Indian chaat recipes we don’t need any chutney like green chutney to make this recipe.
You can easily cook the white peas gravy in pressure cooker and assemble this chaat in no time. Do not let the long list of ingredients intimidate you. This is a very easy yet delicious recipe that you will love! It is also very popular in Tamil Nadu these days.
Ingredients To Make Masala Puri:
To make masala puri chaat recipe you need dried white peas. Please note that you cannot substitute it with fresh green peas though you may use dried green peas.
Next small puris used for pani puri is needed. You can use storebought pooris are use to ready to fry pooris as I did here. We get ready to fry pani puri easily and I use that to make chaat recipes like pani puri, sev puri, dahi batata puri recipes. As an alternate you can also use papdi.
Masala puri is my favorite chaat from the streets of Bangalore. We used to have it regularly when we lived there. I picked up this recipe for masala puri from my neighbor when we left Bangalore. I like to prepare this chaat often as the work is comparatively less. We like to have piping hot white peas masala topped with loads of puri, vegetables and sev.
Serve masala puri as soon you make it. The masala should be piping hot to get the taste completely. You can reheat the gravy for delayed serving. Add crushed puri and sev just before serving. You can leave out grated carrots if you do not prefer.

How To Make Masala Puri Recipe (Step By Step)
To make white peas masala:
1. Soak dried white peas for 6 hours.
2. Drain and take the white peas in a pressure cooker. To that add 2 tablespoons toor dal, 2 pinches turmeric powder and a dash of salt. Pressure cook until thoroughly cooked and mushy. It may take around 8-12 whistles.
3. Dry roast the whole spices and take in a mixer jar. Add 2 tablespoons of cooked lentils and 1 teaspoon chili powder. Grind to a smooth paste.
4. Add the ground paste to the cooked lentils and bring to a boil. Now add 1-2 cups water to adjust consistency.
5. Add salt to taste. Also add 1 teaspoon sugar. Bring to a rolling boil for 3-4 minutes.
6. Add chopped coriander leaves and remove from flame.
To make masala puri chaat:
Take 1/4 cup masala in a serving bowl. it should be really hot.
Crush 3-4 pani puris or papdis and add.
Add chopped onions, grated carrots and finely chopped coriander leaves.
Top with sev and serve masala puri chaat immediately.

For white peas gravy
- 1 cup dried white peas
- 2 tablespoons toor dal
- 1/8 teaspoon turmeric powder
- 2 teaspoons coriander seeds
- 1 teaspoon black peppercorns
- 2 teaspoons cumin seeds
- 2 cloves
- 1/2 inch cinnamon stick
- 2 blades mace
- 2 marathi moggu (kapok buds)
- 1/8 teaspoon grated nutmeg
- chopped coriander leaves
To make and serve masala puri
- 12 fried pani puris or papdis
- 1/2 cup chopped onions
- 1/2 cup grated carrots
- 1/2 cup sev
- chopped coriander leaves
