I noted the recipe for this chocolate mocha self saucing pudding from taste.com and modified it slightly to make it eggless. Ever since I made it three times for various occasions and they were such a hit.
Piping hot, rich and dense pudding with a gooey sauce is so delicious on its own but I like to serve it with some chilled whipped cream (personal favorite) or a small scoop of vanilla ice cream.
Make sure to use the finest chocolate dark chocolate you could for this self saucing chocolate pudding recipe, as the taste of chocolate will shine through. I have used dark brown sugar in this recipe as it pairs well with chocolate.
Making self saucing chocolate pudding is easy and fun. With very few ingredients you can make this rich and gooey dessert that kids and adults will love. While making for kids you may just skip the coffee powder and use boiling water alone.
Make sure to serve the pudding hot as the sauce will thicken on cooling. Also, this recipe does not yield a very saucy pudding. If you want a very gooey sauce, increase the quantity of coffee. If you do not like coffee flavor, just skip the coffee powder and keep boiling water ready to pour over the batter.
Serve self saucing chocolate pudding piping hot with ice cream or whipped cream.
How to make individual serving self saucing chocolate pudding recipe?
You can even make this as individual serving chocolate pudding. Just divide the batter into 6-7 equal portions and spoon in small ramekins. Sprinkle sugar, pour coffee and bake.

How to make self saucing chocolate pudding recipe:
1. Preheat oven at 180C. Grease an eight or nine inch baking pan well and set aside. Sift flour, baking powder, salt and cocoa powder into a mixing bowl.
2. Melt butter and chocolate well until smooth and glossy. Add sugar and mix very well.
3. Pour the chocolate mixture to the sifted dry ingredients and mix well. Keep adding milk as required to make a smooth batter. You may need around 3/4 cup milk.
4. Pour the pudding batter into the prepared baking pan. Sprinkle sugar all over it.
5. Bring 1 1/2 of water to rolling boil. Add 2 tablespoons instant coffee powder and mix well. Boil for 2-3 minutes. Pour this coffee on the pudding batter.
6. Bake in the hot oven for 30-35 minutes at 180C.
7. Serve chocolate pudding hot with whipped cream or ice cream.

Ingredients
- For pudding batter:
- 1 cup flour
- 1 teaspoon baking powder
- 2 tablespoons cocoa powder
- A pinch of salt
- 70 grams butter room temperature
- 40 grams dark chocolate
- 1/2 cup sugar
- 1/2 cup-3/4cup milk
- Vanilla extract
- For sauce
- Sugar to sprinkle on pudding mix
- 1 1/2 cups to 2 cups water
- 1-2 tablespoon instant coffee powder
