I just modified my usual vanilla cookie recipe to make these vegan chocolate cookies and there has been no looking back ever since. So so rich and delicious, has a fudge like texture and those small bits of chocolate and almonds are pure joy.
While I don’t claim these vegan chocolate cookies are sugar free or healthiest, these are far better than the store bought cookies. With whole wheat flour, almond flour, jaggery, dark chocolate and almonds these are surely a wholesome snack for toddlers and kids too.

For these vegan chocolate cookies I have used half whole wheat flour and half almond flour. While you can easily use just wheat flour, please note that almond flour adds a nice flavor to these cookies.
For sweetening these cookies I have used powdered jaggery. It is healthier than refined sugar and preferable for kids too.

What other flours can I use?
You can use plain flour or just whole wheat four if you prefer. Instead of almond flour you can also use coconut flour.
What other sweeteners can be used?
You can use regular granulated sugar or coconut sugar or even dark brown sugar in this recipe.
How long should these cookies be baked?
These cookies are supposed to be slightly chewy edges, so do not over bake them. They turn crispy on cooling. These chocolate cookies tend to be a bot thick and chewy.
Which milk is best for binding the dough?
Really any milk will work in this recipe. While vegans can use almond milk, soy milk, rice milk or coconut milk non vegans can absolutely use dairy milk at room temperature.
Which oil is recommended for baking this cookie?
You can use any cooking oil like canola oil, coconut oil or even mild olive oil.
Step By Step Tutorial
Preheat oven at 180 C/ 350 F. Line a large baking sheet with parchment or grease well and dust with a bit of flour.
Combine powdered jaggery and oil in a bowl. You can use brown sugar or regular sugar in place of jaggery. Also add vanilla extract and mix well.
Sift almond flour, whole wheat flour, baking powder and cocoa powder over the mixed wet ingredients. Mix well.
Add milk of choice and mix well. Add chocolate chunks and chopped almonds. Mix and make a dough. At this stage you can bake the cookies immediately or refrigerate the dough for 2 days or freeze for a month.
To bake the cookies pinch small balls from the dough. I used 1/2 tablespoon as measure for same sized cookies.
Flatten slightly and make patterns with fork if required.
Arrange on the prepared baking sheet and bake in the hot oven for 12-15 minutes.
Let the vegan chocolate cookies cool thoroughly before storing. Keeps well for a week at room temperature.
