Have some bread slices? Some chocolate? You are in for a treat 🙂 How about some thick hearty slices of bread soaked in custard and then toasted to perfection, served with some melted chocolate, yum!

I made this toast with thick chunks of homemade bread and it was so good with coffee. Yeah I agree not the healthiest breakfast but once in a while it is ok to indulge right?

I saw this idea many days back in a magazine and wanted to recreate it. The chocolate french toast recipe I was inspired by consisted eggs though. I have modified the recipe to leave out eggs and also I have used almond milk for making the custard.

The caramelized bananas is a house favorite and it added more taste and texture to this toast. If caramelized bananas are not your call, I have given few more options in the tips section. Ingredients You Will Need

Bread– You can use any type of bread but preferably white. Thick slices soak up the custard well and holds its shape upon toasting. If you have challah or brioche d use them as they make wonderful chocolate french toast. I have used my vegan white bread slices

Corn flour– corn flour is the base for our egg free custard sauce. You can also use custard powder if you have it. Here I have flavored the sauce with vanilla. You can also use cinnamon powder.

Milk– Milk mixed with corn flour is the substitute for eggs in this vegan chocolate french toast. You can use almond milk or soy milk or dairy milk too.

Chocolate– Instead of adding cocoa powder to the sauce or ganache, I have topped dark chocolate pieces on the toast and let it melt before serving. This makes a delicious pool of chocolate and makes the toast very rich. Make sure to use vegan chocolate. You can also simply add some chocolate spread before serving.

Step By Step Chocolate French Toast Recipe

Caramelizing the bananas

First let us caramelize the bananas. You can follow this recipe or do as mentioned here. If you are not going to serve bananas you can skip this step.

Heat a cast iron skillet and add few drops of coconut oil. Spread well.

Place sliced bananas and sprinkle sugar all over it. Cook in medium flame for 3-4 minutes. Sprinkle a dash of cinnamon powder and mix gently. Remove from flame and set aside.

Making vegan chocolate french toast

Add 2 tablespoons corn flour, 1/2 teaspoon vanilla powder or extract to a bowl.

Add 1/2 cup almond milk and 1/2 teaspoon sugar. Mix very well. The consistency should be thinner than a pan cake batter and slightly runny.

To make the toast now dip a thick bread slice in the prepared sauce.

Place the bread slice on a hot skillet. Add few drops of coconut oil or butter if not vegan. Cook for 3-4 minutes.

Gently flip and cook for 2-3 minutes.

Place chocolate squares and press very gently.

Remove from flame as the chocolate starts to melt. Top with caramelized banana or serve as such.

Tips & Variations

  • Instead of adding chocolate squares on toast, you can add 2 teaspoons cocoa powder while making the custard sauce.
  • Instead of caramelized bananas you can serve with fresh mango pieces, strawberries etc.
  • You can also use white chocolate in this recipe.
  • Instead of almond milk you can add dairy milk or soy milk too.

Ingredients
  

For caramelized bananas

  • 1 ripe banana sliced
  • 1 teaspoon sugar
  • 1/4 teaspoon cinnamon powder
  • coconut oil few drops

For vegan chocolate french toast

  • 2 tablespoons cornflour
  • 1/2 teaspoon vanilla powder or extract
  • 1/2 cup milk almond, soy or dairy
  • 6-12 dark chocolate squares or choco chips as required

Notes

Add more or less chocolate as prefered
You can leave out sugar in custard base of prefered
If you don't prefer very sweet toast use bitter chocolate for topping
you can double the recipe
