We as a family love fragrant one pot meals and this veg pulao in pressure cooker makes an appearance very often. I usually make elaborate veg pulao on weekends but this quick version comes handy for lunch box.
The recipe shared here is the way I make veg pulao at home with pressure cooker. It comes out very yummy and flavorful every time and is a hit at home.
This is a very healthy veg pulao recipe with loads of veggies and less fat. You can use potatoes, carrots, beans, cauliflowers, peas, capsicum, corn or any veggies of your choice in pulao. I usually add carrots, beans and potatoes at the least.
I usually garnish the finished pulao with bread pieces but you can also use paneer.
Serve veg pulao with simple raita for a filling and comforting meal. You can also pack this easy vegetable pulao in lunch box for toddlers and kids.
Tips For Making Vegetable Pulao In Pressure Cooker
It is important to know the quality of the rice you use while making pulao in pressure cooker. Aged rice needs more water whereas new rice needs less water. So add water accordingly.
You can make this dish with any kind of rice if basmati rice is not available. Just soak the rice well and drain completely.
For flavorful non spicy pulao it is required to add oil or ghee. If you want to cut calories you can reduce the quantity of oil or ghee.
Once you add the drained rice to the sauteed veggies, mix and saute very well so that the rice becomes dry and coated with oil.
After adding water, mix and stir very well. Bring the water to a boil, close the cooker and pressure cook only for 2 whistles in medium flame.
Always let the pressure settle down on its own. let the rice cool for 5 minutes, fluff up and serve.
For garnish I have used fried bread pieces. You can use caramelized onions or sauteed paneer as we do in biryani.

How To Make Vegetable Pulao In Pressure Cooker Step by Step
1. Rinse,wash and soak the basmati rice for 30 minutes. While the rice is soaking wash and chop the veggies. Do not chop the veggies very fine as they will turn mushy while cooking. You can peel the veggies like potato,carrot if you wish.
2. Heat 3 tablespoons oil in a heavy deep pressure cooker. Add cumin seeds,cinnamon,cloves,cardamom and saute for 2-3 minutes. Add ginger garlic,green chilies and saute well.
3. Add finely chopped onions and saute till it turns translucent. Add the chopped and torn mint leaves and saute well for 3-4 minutes.
4. Add the chopped veggies and mix well. You can add 1/8 cup curd if needed here. I did not add though.
5. Drain the soaked rice well and add to the veggies. Mix well and saute for 2-3 minutes.
6. Add 3 1/2 cups water and salt. (3 cups water for 1.5 cups rice and 1/2 cup water for veggies). Let the water come to a boil.
7. Close the pressure cooker cook for up to 2 whistles. Now lower the flame and cook for 4-5 minutes. Switch off the flame and let the pressure release.
8. In the meantime heat a small pan and add 2-3 teaspoons oil. Fry the cut bread pieces and cashews till olden brown.
9. Once the pressure is released,open the cooker and mix the pulao very gently. Remove to a serving dish and add the bread pieces and cashews. Serve easy vegetable pulao immediately with raita, palak paneer, paneer korma etc

1 CUP = 250 ml
Ingredients
- 1 cups basmati rice
- 1 1/4 cup chopped veggies potatoes,carrots,cauliflower,green peas,baby corns,sweet corn etc
- 1/2 cup chopped onions
- Water
- Salt
- 2 bread slices cut into small squares
- 10 cashew nuts
- 3 tablespoons + 3 teaspoons oil
- Spices:
- 1 bay leaf
- 1/4 " cinnamon stick
- 3-4 cloves
- 2-3 black cardamomns
- 1/2 teaspoon crushed ginger-garlic
- 2-3 green chillies
- Handful of mint leaves
