Ghee roast dosa can be made as thin round dosa, folded into triangle or as cone dosa. Ghee roast dosa is often served as cone dosa only in many hotels. So I have also made it as cone dosa. Few tips on making perfect ghee roast dosa recipe.
- The dosa batter should be slightly thin than regular dosa batter. Thin batter is needed to make very thin dosa.
- Use a very well seasoned cast iron tawa.
- Maintain proper temperature. Sprinkle few drops of water after removing each dosa from tava. If the tava is very hot you cannot spread the dosa. It will stick to the tava and create a mess. if the tava is not hot enough dosa will be rubbery and under cooked.
To make ghee roast dosa recipe you can dosa batter recipe or regular idli batter. I have used idli batter here. Just remember to dilute the batter. For 1 cup idli batter I usually add 1/4 cup water to make dosa.
Serve ghee roast dosa hot with chutney and sambar.

How to make ghee roast dosa with step by step photos.
Mix idli batter and water well.
Heat a cast iron tava. Once the tava is medium hot sprinkle some oil and spread with a cotton cloth or cut onion or potato.
Take a ladle full of batter and spread into a very thin dosa.
Spread some ghee over the edges. Also drizzle some ghee all over the dosa.
let the dosa cook well and edges crisp up.
Now using the handle of the spatula make a perpendicular cut from the center of the dosa.
Using the spatula roll the dosa into a cone. Serve ghee roast dosa hot with chutney and sambar
