These vegan banana muffins are not only easy to make and healthy but also these are the yummiest. So so soft with a nice texture the flavor of banana is just superb in this vegan banana muffin recipe. Adding mashed banana just make the muffin so soft and rich despite not adding butter.
This vegan banana muffin recipe is made with multigrain flour. I used a multigrain blend containing whole wheat flour, besan flour, bajra flour and jowar flour that I get from my local organic store. you can use any flour you want proportionately.
I have used raw cane sugar for this banana muffin recipe and some walnuts for crunch. Topped with oats and dried blueberries these vegan banana muffins give a bright start to the day especially when served in those yellow liners 🙂
To make vegan banana muffin recipe we need 3/4 cup mashed fruit that is mashed over ripe or very riper bananas. The sweeter the better. Next olive oil, cane sugar, vanilla extract and some walnuts are needed. You can top with oats, dried berries or chocolate chips.

How to make vegan banana muffin recipe (step by step)
1. Take the peeled bananas in a mixing bowl. Mash thoroughly with a fork. The mashed fruit should measure 3/4 cup. Preheat oven at 180C and prepare a muffing tin by placing liners.
2. To that add 1/3 cup olive oil and 4 tablespoons cane sugar. Add vanilla. Mix thoroughly.
3. Sift multigrain flour and baking powder along with a pinch of salt over the wet ingredients. Mix until incorporated.
4. Add chopped walnuts and fold in gently.
5. Pour the batter in the liners until 3/4th.
6. Top with oats, dried blueberries and chocolate chips. Bake for 15-20 minutes or until done. Serve vegan banana muffins warm.

2. You can use just wheat flour or maida instead of multigrain flour
3. I used 1/4 cup warm water to adjust consistency. you can use milk or soy milk or even apple or orange juice.
