These muffins with apple are incredibly soft, moist bursting with apple flavor. Adding small pieces of apples instead of puree lends an interesting texture to these muffins.
I have used light olive oil in this recipe as with most of my muffins. The flavor of olive oil goes very well in these bakes. Also oil based cakes stay incredibly soft and moist even after refrigerating.
Which Apples Are Best For Muffins?
Basically any variety of apple that sweet and crisp will be good here. I have used Kashmir apples in this recipe. For sweeter muffins you can use red delicious, honey crisp. If you want to balance the sweetness with slightly tart apples you can use granny smith variety.
What Other Sweeteners Can I Use Instead Of Sugar In Apple Muffins?
In this apple muffins recipe we are using organic raw sugar. You can also make this muffin with granulated sugar, powdered jaggery, palm sugar, maple, honey or coconut sugar.
You can also add 1/2 cup dates syrup in this recipe instead of sugar.
How To Make Apple Muffins?
Preparation For Apple Muffins
Rinse, peel, core and cube the apples.
Preheat your oven at 180 C / 350 F. Line a muffin tray with paper liners.
Mix baking powder, baking soda, whole wheat flour and salt very well.
Making Apple Muffins Batter
Combine oil, vanilla extract and yogurt in a mixing bowl. Whisk very well until smooth using a hand held whisk or beater.
Add measured sugar and whisk again until light and creamy.
Add dry ingredients and mix.
Now add cinnamon powder if using. Mix the batter well.
Add chopped apples and fold gently.
Spoon the batter into lined muffin tray.
Baking Apple Muffins
Top with apple pieces, almond flakes and sprinkle some sugar.
Place the muffin tray containing batter in the center rack of your oven. Keep both the heating rods on.
Bake for 20-24 minutes or until a tester comes out with very few crumbs.
Once done let cool for 5 minutes.
Serve apple muffins warm.
Tips To Make Apple Muffins
- Adding cubed apples lend a nice texture to this recipe. If you want to add pureed apples the quantity of liquid ingredients should be adjusted. So I do not recommend substituting pureed apples here.
- If you want to use honey you nay have to decrease the baking temperature as honey browns very quickly. However I do not recommend baking with honey as I do not prefer to heat honey.
- Every oven is different so the baking temperature varies. Keep a watch after 20 minutes to avoid burnt muffins.
- To make vegan apple muffins replace curd with water and 1/2 tablespoon lemon juice or vinegar.
- Use gluten free baking flour for gluten free apple muffins.
