Kesar kaju katli recipe with step by step photos. Today I am sharing a tasty and exotic sweet recipe that is quiet popular in sweet shops across India. Kesar kaju katli is a tasty variant of ever famous kaju katli or vegan cashew fudge

Kesar kaju katli is a very expensive sweet found in select sweet shops. It is very easy to make this saffron infused kaju katli at home. The addition of saffron simply takes this sweet to a whole new level.

I have added few drops of rose essence and it complimented the saffron very well.

To make kesar kaju katli recipe use cashews that are in room temperature. If the cashews are cold you may not get fine powder. Here I have not used any milk to infuse saffron. I have just added the finely crushed saffron in sugar syrup.

You can use 2-3 tablespoon milk to infuse saffron if you wish to. However if milk is used the kaju katli should be be refrigerated and consumed in 2 days. If milk is not used you can store the sweet in room temperature.

How To Make kesar kaju katli Recipe

1.Take cashews in a clean dry mixer jar. Make cashews into a very fine powder. Measure 1 cup of cashew powder and set aside.

2. Take 1/2 cup sugar in a pan. Add 1/4 cup water and mix well. Cook this sugar solution on medium heat and make a one string sugar syrup.

3. One the string consistency is reached add the crushed saffron, rose essence and mix well.

4. Add the cashew powder and mix thoroughly. Cook this mixture for 3-4 minutes on medium flame. Switch off the flame once the mixture turns into a soft mass. It is fine even if you remove it a tad early but do not over cook. If over cooked the mixture will turn hard and brittle.

5. Once the mixture is warm, knead it very well. Knead well for 5-7 minutes.

6. Roll the cashew dough into a 1/4″ thick circle. Roll in between two butter papers for easy rolling.

7. Cut into square or diamonds of desired size. Serve kesar kaju katli as needed.

1. Make sure cashew powder is fine
2. You can use blanched almonds instead of cashews

    Looks wonderful. Kaju katli is my favorite. I also make vanilla flavoed kaju katli sometimes.
