Homemade mango jam recipe is the simplest fresh fruit jam recipe you will ever make. It had a wonderful tropical flavor and tastes delish.
The best part about this jam recipe is you do not need any pectin. Thought ripe mangoes do not contain much of natural pectin like apples, the lime juice we add here makes up for it. The citrus or vitamin c in lime juice thickens the jam.
Cooking lime juice with sugar acts as pectin and cooks up the fruit to jam like texture. While you can add some of your favorite whole spices and make a spiced mango jam, I like to keep the flavors clean so I do not add any.
The process of making mango jam is super simple. You just have to puree or chop ripe mangoes and cook it with sugar and lime juice.
The consistency can vary as per your preference. As you can see from the photos I like to make a thick and a bit chunky jam.
For a smooth and slightly runny jam , puree the fruit and use. What I usually do is chop the mangos and as the chopped mango cook mash them here and there using a potato masher. We prefer chunky jams compared to super smooth ones and I follow this method for most of jam recipes.

How To Make Mango Jam Recipe
First of all peel and finely chop the mangoes. You can also puree the mangoes or use a mix of puree and finely chopped fruit.
Add the chopped fruit into a broad heavy pan.
To that add the measured sugar. Mix well and start cooking.
Cook in medium flame for 12-15 minutes stirring frequently. The sugar will dissolve first and the the mixture will start to thicken. After 12 minutes or so the mixture will be thick and leave the sides of the pan.
At this stage add lemon juice and mix well. Cook for 2 minutes and remove from flame. let cool to room temperature thoroughly before storing. Store in clean jars and refrigerate.
Variations And Tips
The flavor of the jam greatly depends on the quality of mango. Use ripe and flavorful mangoes that are less fibrous.
Lemon juice acts as natural preservative. Do add lemon juice in any of your homemade jam recipes to increase the shelf life.
To flavor this mango jam you can add a dash of cardamom or 1/2 teaspoon minced ginger. Also some nutmeg powder can be used.
Instead of regular sugar you can use palm sugar, powdered jaggery also.
How Long Can I Store This Jam
This jam can be stored for 10 days in refrigerator. As we are not using any preservative, this jam should be stored in fridge only.
Make sure the bottle is clean and dry before storing. You can also use sterilized jars if you prefer. Always use a clean and dry spoon to serve jam.
You can follow standard canning process and can the mango jam for longer shelf life.
Serve with toast, fresh bread, pancakes, waffles.
For toddlers and kids you can also serve with dosa, parahta.
You can make jam milkshake, French toast roll ups or even jam filled buns with this jam.

Mango Jam Recipe Without Preservatives
1 CUP = 250 ml
- 2 cups mangoes ripe, finely chopped
- 1 cup sugar can also use 3/4cup
- 1 tablespoon lemon juice
