This luscious no bake mango cheesecake has a mousse like texture but very simple to make without any hassle or complicated steps. The biscuit base, creamy rich cheesecake layer and a contrast mango jelly layer altogether makes this cake a true winner. Let’s get started 🙂

This mango cheesecake recipe is a very easy one and even a beginner can make this with great success. The ingredients used here are simple ones and I have given some substitutions in the notes section too. Only this you need some time to make this no bake mango cheesecake recipe, yes it takes some time to make different layers and wait for them to set.

Now that mangoes have started to show up, I made this cake last week and we loved every bit of it 🙂 So this mango season, make this awesome dessert and enjoy, perfect for summers too! I am sharing a super detailed recipe with step by step instructions.

About This Recipe

No bake mango cheesecake is an easy version of classic cheesecake. Traditionally cheesecakes are baked in water bath with a graham cracker crumbs crust and they contain egg along with cream cheese.

There are many flavors in cheesecakes like vanilla, chocolate and fruit based ones like mango, strawberry, raspberry.

This is an easy recipe where you don’t have to have bake anything and we are also not using eggs or gelatin. This is a vegetarian mango cheesecake and agar agar is the setting agent used here.

The whole recipe is made in a food processor. The cheesecake mixture comes together in minutes. You can make this cake easily with store bought mango pulp puree too.

A springform pan is helpful in this recipe but it is not totally necessary. Do check out my notes in how to make cheesecake without springform pan.

Next I have used agar agar to set this cheesecake. I have used flakes that I chopped and soaked in water for sometime but you can easily use agar powder too.

You should always mix agar agar with cold water until well dissolved and then heat it to activate it. Do not try to add and mix agar in hot water, it just becomes a lump and cannot be used in the recipe.

Along with cream cheese I like to add a bit of fresh cream for rich taste. You can also add a dash of sour cream to balance the flavors.

You can assemble this cake in many ways. I have gone for the classic taste and look- biscuit base followed by a creamy rich and smooth cheesecake layer followed by a jelly like mango layer.

For the cookie crust you can use graham crackers or digestive biscuits. You can also use chocolate flavored cookies for a varied taste.

This mango cheesecake is not overly sweet, I have used just 3 tablespoons sugar for the whole cake. You can vary the sugar according to the sweetness of the fruit. You can also use brown sugar if you like for the cheesecake filling.

These layers not only look stunning but also has different flavors, textures and the taste is perfectly balanced.

The biscuit base has a nutty buttery taste, cream cheese layer is luscious, rich, smooth with just enough sweetness and the fruit layers perfectly balances it with fruit notes and slight tart taste.

If you like you can assemble and serve this cake in a more dramatic way. After setting the cookie base, you can alternate between cheesecake layer and jelly layer. You will have just to wait for each layer to set.

Another option for you is to set this cake in individual dessert jars like I have done in this strawberry cheesecake recipe.

How To Make Mango Cheesecake Recipe

I have broken the steps to make vegetarian mango cheesecake into two parts for easy understanding. I have also mentioned few tips how to make this with ease after the recipe, please checkout.

Before beginning the recipe prepare a 9 inch springform pan for setting the cheesecake. Grease the base of the pan generously with butter and set aside. You can also place a piece of parchment with excess paper hanging out of the sides. Preparing the biscuit base for cheesecake

Add 20 digestive biscuits in a food processor and process till the they resemble coarse crumbs.

Transfer to a mixing bowl and add melted butter. Mix well. Transfer the prepared mixture and spread well. Press with the bottom a flat bowl and make the crust smooth. Chill it for 30 minutes as we prepare the next layer.

Preparing Cheesecake Batter

Measure and chop 5 grams agar agar flakes finely. Soak the chopped agar agar strips in 1/2 cup water and set aside. If you are using agar powder, you can mix 3 teaspoons of it in 1/2 cup water at the time of using.

Peel and roughly chop 3 large and ripe mangoes. Transfer the chopped mangoes to a blender jar and blend to a smooth puree. Keep aside until use. You will need 2.5 cups mango puree or this recipe.

Take the cream cheese in a clean bowl and whisk well until smooth.

To this add fresh cream if using, vanilla extract, sugar and mix very well. The mixture should be very smooth.

Add about 1 1/2 cups of mango puree to the cream cheese mixture and mix well. Keep the remaining 1 cup mango puree in a separate bowl. You can use a food processor or blender for th

Now check on the agar flakes, they should be soft. Heat it gently in low flame until they dissolve completely and the mixture turns gelatinous.

Now quickly add 3/4 of the agar solution to the cream cheese mango filling and mix very well. Pour this cheesecake batter over the chilled cheesecake crust, tap to level and return to refrigerator for 30 minutes. After pouring the cheesecake mango filling, some air bubbles will be formed and make sure to prick them away with a tooth pick for smooth looking cake.

In the meanwhile add the remaining agar solution to the reserved mango puree, also add 1 tablespoon lemon juice and mix well. Cook this in low flame for 3-4 minutes

Pour this glaze over the set mango cream cheese layer carefully. Level with a spoon if required.

Chill the prepared cheesecake at-least for 4 hours. Overnight chilling is preferred. Slice and serve the mango cheesecake immediately, thoroughly chilled.

Recipe Notes & Tips

If you do not have a springform cake pan, just grease a 9 inch round cake pan really well in the base and sides. Place a large piece of parchment inside the base with plenty of paper hanging from the sides. The idea is to put pull the set cheesecake from the pan by pulling the parchment hanging from the sides of the pan.

If you are using agar agar powder, mix it with cold water and heat gently until dissolves completely. For flakes, it is a must to chop and soak them prior before cooking.

If you are using store bought mango pulp you will need 2.5 cups it.

Adding mango glaze is optional and you can make this cake with just two layers too. You can also make a strawberry or pineapple glaze for different flavor.

If cream cheese is unavailable you can use hung yogurt. Just use same quantity of it with 100 grams sour cream

Ingredients

  • 5 grams agar agar flakes soaked in 1/2 cup water
  • 1 teaspoon vanilla extract

1. You can use gelatin instead of agar agar
2. The top most mango glaze layer is optional.
3. Instead of cream cheese you can use a mix of hung curd and smooth fresh paneer
4. Instead of mango glaze you can make a compote with cherry or strawberry and add it too.

    Ur recipe pic is beautiful. Cud you confirm how much vanilla u used in the recipe please. Also is there any taste difference to the cake if I use gelatin.
