To make palak paratha first we will blanch the palak leaves. Then it is pureed with ginger and green chilies. I Have also used some spice powders in the dough. When making palak paratha for babies you can completely skip the spice powders or add just a dash of pepper cumin for flavor. I would suggest you skip the salt and keep the spice powders when making palak paratha for toddlers or babies.
There are many ways to make palak paratha recipe. Here I am sharing a very easy method and it yields best palak paratha that stays soft for hours. Stack the cooked parathas after smearing ghee on a soft towel. This ensures the softness of parathas for long time. This spinach paratha is perfect to pack in lunch box too. I like to cook palak paratha without oil or butter. Once the paratha is cooked I smear ghee generously over it. This way the paratha stays soft for hours. If you prefer crispy paratha with layers you can use rolling and folding method used for pastries. That is the method used in making plain paratha
You can serve palak paratha with side dish of your choice. As the paratha is already spiced up we like to have it with simple raita. When making for guests you can serve this paratha with chutney or any rich curry too.

- Instead of making palak puree you can use chopped spinach leaves. You can even saute the spinach with sliced onions and use to make spinach paratha
- You can make stuffed paratha like paneer paratha or aloo paratha with this spinach paratha dough.

How to make palak paratha recipe (step by step pictures)
1. Wash and drain the spinach leaves well. To clean them properly, pick each leaf and check well. Rinse the once or twice and place in a big bowl of water. Add some salt and mix well. Let sit for 10 minutes. Now rinse again with plain water once or twice. Drain the water and use in the recipe.
2. Blanch the spinach leaves in boiling water for 2 minutes. Add some sugar to retain the color. Rinse under cold water thoroughly. Puree the spinach leaves along with green chilies and peeled ginger.
3. Take spinach puree in a bowl. To that add whole wheat flour, salt, cumin powder and chaat masala powder. mix well. You can 1 teaspoon oil to the dough if needed. Add water and knead to a smooth and soft dough. Add water to the mixer jar and use that water for kneading the dough.
4. Let the dough rest for 20 minutes. Divide the dough 6 equal portions.
5. Take one dough ball and dust with flour. Roll into a round paratha. It should be slightly thicker than roti.
6. Place on a hot tava and cook from both sides until brown spot appear and edges are cooked. You can use oil or ghee for frying.
7. Stack the cooked parathas to keep them soft. Serve palak paratha with side dish of choice.

- 2 green chilies
- 1 inch ginger peeled
- 1.5 cups whole wheat flour
- 1/2 teaspoon cumin powder
- 1/2 teaspoon chaat masala powder
- Salt to taste
- Ghee for serving
