Next to ice creams mousses are my favorite summer dessert. Mousse are like instant ice creams for us 🙂 Yep you get that same melt in mouth texture, rich, creamy but ready in minutes unlike ice cream.
Its like whenever you crave chilled dessert you whip some cream, add your favorite flavor and chill for two hours. How easy is that? Only the waiting time though 🙂
Usually I make mango mousse, strawberry mousse or chocolate ones but this summer I went beyond those and made many other flavors.
Along with super tropical pineapple mousse, delicate rose mousse, white chocolate vanilla mousse, nutella mousse are our favorite flavors. You may also like this vegan avocado mousse.
This mousse with pineapple especially is so festive, special and perfect as party dessert. You can easily make it ahead, set in refrigerator in single serve jars or tumblers and serve as needed. Yummy dessert is one less thing you have fuss about!
I have been making this mousse on repeat mode since last few days. We are having a steady supply of sweet pineapples and this mousse is just what we could think of 🙂
You need few simple ingredients for this recipe and a total hands time of 20 minutes. Yes it is that easy.
This Pineapple Mousse Recipe Is

Usually for desserts with pineapple like this mousse or pineapple cake, canned pineapple is required. By now you all know that I try to stay away from canned or preserved stuff from stores as far as possible.
So here also I have stewed fresh pineapple slices as I did for the cake. When stewing the pineapples at home you can control the amount of sugar and you got yourself any preservative free fresh fruit, perfectly stewed.
Honestly it takes just 15 minutes that too unattended. I usually do these prep work along while cooking something else.
Along with fresh cream we are also adding some white chocolate in this mousse. White chocolate adds creamy texture and also some volume to this pineapple mousse.
Also white chocolate helps in setting the mousse. Use best quality white chocolate for smoother mousse.
Step by step method
Prep your pineapple
Combine 1/4 cup sugar and 3/4 cup water in a pan. Bring to a rolling boil and simmer for 3-4 minutes.
Add the pineapple slices and simmer for 12-15 minutes.
Once the pineapple slices have soaked the syrup and cooked well, drain and set aside to cool.
Transfer to a blender jar and blend coarsely.
Making Pineapple Mousse
Add 1/4 cup fresh cream in a pan and simmer gently.
Add chopped white chocolate and mix well until the chocolate melts and combines well with the cream.
Set aside to cool.
In another clean bowl, add 3/4 cup fresh cream or whipping cream and whip until soft peaks are formed. You can add few drops of vanilla extract if preferred.
Add melted white chocolate.
Also add pineapple paste and fold very gently.
Divide among three small jars or glass and chill for 2-3 hours.
Just before serving add chopped pineapples and place a white chocolate piece. Serve pineapple mousse immedietly.
Tips & Variations
If you don’t have or don’t prefer to use white chocolate you can eave it out. Just increase fresh cream by another 3/4 cup for three servings and add 1/4 cup powdered sugar while whipping the cream.
If you prefer to use canned pineapple you can do so. Use 4-5 thick slices and grind into a coarse paste.
For more flavor you can add few drops of pineapple extract.
The recipe can be doubled. The given recipe makes three normal servings.

Ingredients

- 4-5 thick pineapple slices
- 1/4 cup sugar
- 3/4 cup water
For mousse
- 1/4 cup cream
- 100 grams white chocolaye plus more for serving
- 3/4 cup fresh cream you can also use double cream or heavy cream
