Pumpkin kheer recipe or kaddu ki kheer is a delicious and rich dessert made with yellow pumpkin. To make this kaddu ki kheer you need just 4 main ingredients and 2 optional ingredients. pumpkin is known as parangikai in Tamil and kaddu in Hindi. It is a very commonly used vegetable in Indian cuisine. It is seen as symbol of prosperity and used in wedding feasts, temple feasts also.
Some common recipes made using pumpkin are pumpkin kheer, pumpkin sambar, pumpkin halwa, chutney. Also we make soup with pumpkin.
There are many ways to make pumpkin kheer. In some recipes grated pumpkin is used but that is a bit time consuming. Here I have used cooked and pureed pumpkin and the kheer is so smooth with a rich texture.
I have also added few blanched almonds in this kheer to add richness. Next I have used condensed milk in this recipe so the time taken for making pumpkin kheer in this method is very less.
Serve pumpkin kheer chilled as dessert. You can also serve it warm if you prefer.
How To Make Pumpkin Kheer With Condensed Milk?
To make pumpkin kheer begin by cooking pumpkin and blanching the almonds. I pressure cooked the pumpkin and also added the almonds along with it.
Drain and puree the cooked pumpkin and blanched almonds. Next boil the whole milk and add condensed milk to it. Simmer for 6-7 minutes. Add the pumpkin puree, cardamom powder and mix well. Simmer for 5 more minutes. Serve warm or chilled.
How Can I Make Pumpkin Kheer Without Condensed milk
You can easily make this kheer without condensed milk too. Use 1/2 cup sugar for 2 cups milk and 1 cup pumpkin puree.
Cook and puree the pumpkin as mentioned in the recipe. Bring the whole milk to a boil first. Add sugar and mix well. Simmer for 10-12 minutes so that milk reduces a bit in the volume.
Now add the pureed pumpkin and mix well. Simmer for 5 more minutes and remove from flame.
Recipe Notes and Tips
I have used the regular yellow pumpkin which is local to us. You can also use red pumpkin.
Along with pumpkin you can also use chopped carrots for color
Adding almond is optional
Use full fat milk or whole milk for rich taste.
