Vegan Corn Fritters

Vegan corn fritters with fresh sweet corn kernels, chickpea flour, onions and fresh herbs. You will love the vegan and gluten free version of the classic corn fritters, crispy at the edges with fluffy and soft texture.

Serve with a simple salad or your favorite dip for snack or as a yummy side dish in lunch or dinner!

So when I shared these zucchini vegan fritters recipe, some of you wanted these corn fritters recipe too. The other day when I spotted fresh and tender sweet corns, I exactly knew what I would make with them 🙂

I love to make quick and easy evening snacks loaded with veggies and fritters are and excellent option. Few other evening snacks that we love at our home are veg cutlet, mixed veg nuggets, onion pakora, corn pakoda.

Now these corn fritters have everything you look for in a snack. These are super easy to make, one bowl recipe with simple ingredients and gets ready in 20 minute flat.

Taste is spot on with crispy edges and super fluffy texture. Perfectly seasoned, loaded with corn and onions, these fritters will get you addicted once you try them.

For those who care, these vegan corn fritters are made with just 2 tablespoons oil for around 8 fritters. You can even use lesser oil and fry them in low flame if you prefer.

Even without any eggs or milk, these fritters have such a wonderful fluffy texture. I used the same technique I do for vegan french toasts.

Serve vegan corn fritters hot and fresh as soon you make it. They don’t remain crispy for long.

These Vegan Corn Fritters Are

Ingredients You Will Need

Corn kernels– You can use either regular corn or sweet corn kernels here. I have used sweet corn kernels. No need to boil or blanch them.

Onions– Be generous with onions as they so much flavor and taste.

chickpea flour– chickpea flour is the binding agent we use in this recipe. If not gluten free you can also add plain four or wheat flour.

Rice flour– a small amount of rice flour is added for crispiness. Your other options are spelt flour, amaranth flour, almond flour.

Herbs– In fistfuls please. Add loads of chopped cilantro, scallion greens, dill leaves, parsley, chives. Add one or add add all 🙂 I used cilantro and scallion greens.

Seasoning– I have kept the seasoning for this vegan corn fritters very simple. Just some freshly cracked black peppercorns, salt and that’s it.

How To Make Vegan Corn Fritters

Combine 1 cup chickpea flour and 1/2 cup water in a large bowl.

Using a whisk, whisk this mixture vigorously to form a slurry.

Add finely chopped herbs and thinly sliced onions to the chickpea slurry.

Now add sweet corn kernels.

Finally add rice flour, freshly cracked black peppercorns and salt.

Mix well everything together. Heat 2 tablespoons oil in a thick flat pan or skillet.

Using a cookie cutter remove a portion of the fritters batter.

Place in hot oil and gently spread a little with a ladle.

You can fry 3-4 fritters at a time depending on the size of your pan.

Fry the fritters from both sides until golden in medium flame.

Remove to a plate.

Fry the remaining batter in the same oil.

Serve vegan corn fritters warm.

What To Serve With Corn Fritters?

These fritters taste great as snack or side dish.

I like to serve these fritters as snack with a simple salad like onion tomato salad, or cucumber salad. Even avocado salad will taste good here.

You can also serve these corn fritters with any dip like sour cream dip, yogurt dip or spicy chutney like green chutney or chili garlic sauce too.

These also well as side dish with grilled dishes.

  • 1 cup chickpea flour besan
  • 2 tablespoons rice flour
  • 1/2 cup water
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped fresh herbs cilantro, scallion greens, dill leaves, parsley
  • 2 cups sweet corn kernels fresh or froxen
  • 1/2 teaspoon freshly pounded black peppercorns
  • salt to taste
  • 2 tablespoons oil
