This herb garlic bread is my recent try that turned out yummy. This is an easy white bread recipe infused with herb garlic butter.
This is the first time I shaped a loaf and I am pretty much happy with the results. This garlic loaf is made of whole plain flour, spiced with mixed herbs and filled with garlic butter. The aroma that fills the house while this is baking is simply divine.
Once baked the loaf will have wonderful flavor of garlic and herbs and goes very well with a slather of butter for breakfast.
You can also serve herb garlic bread with soup for a comforting meal. The leftover bread can be toasted and served or used to make garlic toast, cheese toast or bruschetta.
Herb Garlic Bread Ingredients:
- Flour- I have used plain flour in this recipe. You can easily whole wheat flour or mix of both flours. You can even try using oats flour, buckwheat flour along with plain flour. I would suggest a ratio of 1 cup oats flour to 2 cups plain flour.
- Yeast- use good quality active dry yeast or instant yeast
- The recipe for bread itself is vegan but the filling uses butter. If you don’t want to use butter you can use extra virgin olive oil instead of butter to mix in garlic.
How To Make Garlic Butter For Garlic Loaf?
I like to use salted butter for making garlic butter. If you use unsalted butter just add a pinch of salt. The butter should be soft and at room temperature.
Peel the garlic cloves and mince it well. You can also use garlic powder. You can use as much or less garlic you prefer.
Mix the minced garlic and chili flakes to the butter. Whisk well and let sit for 30-40 minutes for flavors to mingle.
You can store garlic butter in fridge and use as required. Just melt or soften before using in the recipe.
What Herbs Can I Use For Herb Garlic Bread?
You can use any dried herb you prefer. Here in this recipe I have used mixed Italian herb. You can also use dried basil or oregano or rosemary.
Also you can use pizza seasoning in this recipe.
If you prefer to use fresh herbs you can do so. Just chop then finely and add 3-4 tablespoons of preferred herb.
I have added the herbs while kneading the dough but you can also infuse them in garlic butter.
Recipes Notes, Tips and Suggestions:
To make herb garlic bread I have used plain flour but you can even use wheat flour. Just note that the bread will be a bit dense and dark colored.
Once baked let the bread cool thoroughly before you slice.
Garlic loaf keeps well for 2-3 days in fridge. Keep the bread well covered.
You can toast the slices on next day and serve with any spread.
Serve garlic loaf slices warm or at room temperature.

How To Make Herb Garlic Bread Step by Step
Making Garlic Butter:
Mix minced garlic cloves, chili flakes into soft butter and whisk well. Add salt if using unsalted butter. Set aside.
Making Herb Garlic Bread
Take 1 cup luke warm water in a mixing bowl. Add 3/4 tablespoon active dry yeast, 2 teaspoons sugar and mix well. Set aside the yeast to raise.
Once the yeast is frothy, add 3 cups flour, pinch of salt, 2 teaspoons olive oil, 1/2 teaspoon chili flakes, 1 teaspoon dried mixed herbs to it. Mix well and start kneading. Add more water if needed and knead.
The dough will be very soft and slightly sticky. Apply some oil in the palms and knead well. Do not be tempted to add more flour. Work on the dough and knead well for 10 minutes. set aside the dough for proofing (1- 1.5 hours)
In the mean time take soft butter in a small bowl. Add minced garlic cloves, salt, chili flakes and mix very well.
Once the dough is proofed punch it back and knead again slightly.
Roll the dough in to a thick circle. Place a blob of prepared garlic butter over it. spread it well.
Sprinkle some grated cheese if using. Roll the dough into a tight log.
Place the rolled log in a greased and floured loaf tin. Cover with a damp towel and set aside for second raising for 30 minutes.
Preheat oven at 2o0C. Bake for 40-50 minutes. Allow the bread to cool for 5 minutes in the tin and then cool on a wire rack before slicing. Serve garlic loaf sliced with soup.

- 3 cups whole wheat flour
- 3/4 tablespoon active dry yeast

- 4 tablespoons soft butter
- 4-6 garlic cloves peeled and minced
- 1/2 teaspoon chili flakes
- Grated cheese as required
- Sesame seeds for topping
