Vegetable raita with mixed veggies and homemade curd. This veg raita is a delicious, easy and clean side dish for your paratha, pulao, biryani meals. You can make this raita in many ways and here is how I make it. Mixed vegetable raita recipe with step by step photos.

Vegetable raita is one of the popular Indian raita recipes. A raita is an Indian salad with veggies or fruits mixed in seasoned yogurt. There are many types of raita we make like onion raita, cucumber raita, bhindi raita, aloo raita.

This mixed vegetable raita is a favorite at home and I often make it. I make this raita when I have bits and odds of veggies that I need to finish mostly. You can add any of your favorite veggies in this recipe.

For any raita recipe always use fresh curds. Sour curd or yogurt will just spoil the taste , texture and flavor of the recipe.

Serve veg raita as side dish with any spicy rice like masala rice, okra rice, cilantro rice, veg biryani, tawa pulao. Also this raita goes well with parathas like aloo paratha, kulcha, laccha paratha.

How To Prep Yogurt For Vegetable Raita

As I mentioned above always use fresh curd for best tasting raita. I use homemade set curd always. You can also use Greek yogurt for very rich & creamy raita.

Take the required amount of yogurt or curd in a bowl. Whisk it very well with a hand held whisk or wooden churner until very smooth. There should not be any specs of malai for smooth raita. Season your yogurt with salt and other spices as per the recipe.

Now keep this seasoned yogurt chilled until serving. Add the required chopped vegetable just before serving.

Which Veggies Go Well In This Recipe?

For this mixed veg raita recipe you can add chopped carrots, cucumbers, peppers, tomatoes. You can also add onions, boiled corns in this recipe.

How To Make Mixed Vegetable Raita

Peel and chop the carrot & cucumbers into small cubes. Rinse and chop tomatoes and peppers finely too.

Take fresh curd in a bowl. Whisk well until smooth.

Season with required salt, a pinch of roasted cumin powder and chaat masala powder. Mix well.

Add the chopped vegetables and mix well.

Serve veg raita immediately.

Tips For Making Mixed Vegetable raita

Use fresh, crisp and juicy carrots, cucumber and peppers for this recipe

Use plump red and ripe tomatoes for this raita. You can also use halved cherry tomatoes.

Chop veggies in uniform size.

Mix vegetables to seasoned curd just before serving

Do not use more veggies than mentioned. the raita should contain more yogurt for best taste.

Always serve vegetable raita immediately.

You can use just roasted cumin powder and pepper powder leaving out chaat masala powder.

Ingredients
  

  • 1 medium carrot peeled and cubed
  • 1 small cucumber peeled and cubed
  • 1 small green bell pepper finely chopped
  • 2 small tomatoes finely chopped
  • 1.5 cups fresh curd
  • 1/2 teaspoon roasted cumin powder
  • 1/2 teaspoon pepper powder
  • 1/2 teaspoon chaat masala powder
  • salt to taste
