I have tased veggie fajitas few times in restaurants but once I started making these at home, I have never ordered it from outside 🙂 This is a great recipe is that good and so easy!
What Are Fajitas?
The word fajita typically means a strip of meat but usually it is referred to a dish where a tortilla is served with sauteed meat, some salsa and sour cream.
While the original recipe is meat based, there are many variations for vegetarian fajitas as well as vegan fajitas recipes. Here I am sharing a delicious vegetarian fajita recipe with homemade soft flour tortillas, a fresh tomato salsa and absolutely delicious fajita vegetables.
These are not only so delicious but very easy to put together as well if you have tortillas ready. I use a food processor to chop the vegetables for salsa so it gets ready in a jiffy.
Along with vegetables I also use some paneer for the filling which makes this dish super filling, protein rich and more satiating.

Ingredients For Vegetarian Fajitas
Making of this meatless fajitas can be divided into three parts
- Getting tortillas ready
- Making fajita vegetables and salsa. You can make fajita veggies on stove top or bake them in a sheet pan too.
- Assembling and serving. Your own homemade tex mex dinner in minutes 🙂
Corn Tortillas Or Flour Tortillas
These tortillas make the base of this best vegetarian fajitas recipe. You can use store bought or homemade. I have used homemade flour tortillas here. For gluten free option just use gluten free tortillas like corn torrilla. You can also absolutely skip tortillas and use tacos instead to make vegetarian fajitas recipe.
For Fajita Vegetables
Vegetables
For this vegetable fajitas recipe I have used strips of yellow bell peppers, red bell peppers, green capsicum, red onion and some tomatoes for this veggie fajita recipe. You can also add orange peppers or sweet candy peppers.
Paneer
Along with vegetables I have also used some panner strips for this recipe. Adding paneer lends a wonderful texture, taste as well makes this dish more satiating and protein rich.
Fajita Seasoning
It is basically a blend of spices like cayenne pepper, cumin powder, onion powder, garlic powder, chili powder etc. It is easily available but you can also simply substitute a mix of cayenne pepper or chili powder cumin and a dash of garlic. This seasoning adds a robust flavor to this dish.
Chili Powder
If fajita seasoning is unavailable I sometimes just add chili powder cumin powder and a pinch of salt combined in a small bowl.
Salsa
I like to add some salsa as topping while serving fajita. You can add fresh tomato salsa or even roasted tomato salsa, pineapple salsa or corn salsa. You can also add guacamole or avocado salad instead.
Instead of salad you can just add finely chopped onions too.
Cheese
Traditionally a Mexican cheese called queso fresco or cotija cheese for this recipe. You can use shredded cheddar too or just leave out cheese. I have not added any cheese here. You can also use any dairy free cheese if you wish.
Lime Juice
A squeeze of fresh lime juice added towards the end ties lends so much flavor and a refreshing taste to these veg fajitas.
How To Make Fajita Vegetables
Stovetop Method
To prepare vegetable stuffing, cut bell peppers into thin strips. Cut paneer into thin strips, chop the onions and mince the garlic.
Heat 2 teaspoons oil in a cast iron skillet or any pan. (I used olive oil). Fry the garlic for 3-4 seconds. Add the onions and saute for 2-3 minutes. Add finely chopped tomatoes and saute for few minutes.
Add the chopped bell peppers and mix well and saute. Add salt, fajita seasoning or a mix of pepper powder, cumin powder and mix well.
Add paneer strips and saute well for few minutes in medium heat. Add fresh cilantro leaves and remove from flame.
Oven Method
To grill the fajita vegetables begin by preheating your oven at 180 C or 325 F.
Add the cut veggies and paneer to a mixing bowl and add the seasoning, salt to taste to it. Add few drops of oil and rub all over the vegetables.
Place the vegetables and panner in separate layers on a greased baking sheet and bake or grill for 8-12 minutes. Remove to a plate.
How To Make Vegetarian Fajitas
Here is how you assemble and serve a fajita.
Warm a store bought or homemade tortilla for few seconds on a warm skillet preferably in a cast iron pan on medium high heat.
Place required amount of prepared fajita vegetables. Also add some salsa. Now you can add shredded cheese or a dollop of sour cream. Insteas of sour cream I sometimes add a tablespoon of plain greek yogurt with a dash of freshly cracked black pepper.
Close from both sides, secure with a tissue and serve immediately. You could also sprinkle some more fajita seasoning, Mexican spice mix or even smoked paprika for more zing. This dish is so versatile that it tastes good with any and all of your desired toppings 🙂
I sometimes make fajita style vegetables with just peppers and onions, that is delicious too! When doing only peppers and onions try to use different colored peppers. This is simply a delicacy that your whole family will enjoy!
Variations You Can Try
With pinto beans
Instead of adding fajita vegetables you can make a pinto beans filling with fajita seasoning. You can also toss in half cup cooked pinto beans or even kidney beans along with vegetables. You can also use black beans or any lentils too.
With Portobello mushrooms
To make this dish more substantial or protein rich you can make quick filling with portobella mushrooms or any variety of mushrooms like white mushrooms. Some crushed red pepper tastes super delicious.
Vegan Fajita Vegetables
The base recipe as such is vegan so you can either skip cheese and sour cream or just use vegan sour cream and shredded vegan cheese.

Ingredients
- 6-8 tablespoons fresh tomato salsa
- 6 tortillas corn or flour
- 1/2 green bell pepper cut into thin strips
For Fajita Vegetable
- 1/2 yellow bell pepper cut into thin strips
- 1/2 green bell pepper cut into thin strips
- 100 grams paneer cut into thin strips
- 2-3 garlic cloves minced
- 1 tablespoon tomato ketchup
- 1 small onion finely chopped
- 1 small tomato finely chopped
- 1/2 teaspoon cumin powder
- 1/2 teaspoon pepper powder
- 1 tablespoon fajita seasoning
- Salt
