Fajita recipe with step by step photos. Very easy to make, delicious and absolutely addictive fajita recipe with homemade flour tortilla, spicy and crunchy veggie filling topped with fresh tomato salsa.

I have seen this fajita recipe in few cook books and I always wanted to try one. But I was skeptical as always about buying tortilla or salsa from shops, once I saw this colorful fajita recipe here, I wanted to try my hands on the same. I decided to prepare all the necessary stuff at home and made flour tortilla. The recipe calls for chunky tomato salsa, but I have eaten veg fajita with fresh sals, so I decided to use fresh tomato salsa for my fajita recipe.

Fresh, soft and tasty tortilla stuffed with some spicy crunchy veggie saute, topped with spicy and tangy salsa is one great meal, I made just 6 fajitas and they were all gone in seconds 🙂

To make fajita recipe at home, you need to plan ahead and stock upon few ingredients like flour tortilla, ingredients for filling and salsa. If you are going to use store bought tortilla and salsa, then making fajita recipe is super easy. Even if you plan to make everything from scratch as I did it will not take more than an hour, totally worth spending!

The recipe I referred to uses different colored bell peppers,squash, jack cheese and red onion. I have used paneer strips instead of squash and left out cheese. I used a wee bit of tomato ketchup just to balance the taste. Just try this fajita recipe once for a change and you will love it. If you do not want to use flour tortilla, you can prepare the same with thin and phulka too.

Serve fajita with some more salsa, you can even pack in tiffin for toddlers and kids.

Fajita recipe with step by step photos.

1. Prepare flour tortilla as mentioned here. If using store bought tortilla, heat them as mentioned in the pack. the tortillas should be thoroughly soft and warm.

2. Prepare salsa as mentioned here. You can use store bought chunky salsa too.

3. To prepare vegetable stuffing, cut bell peppers into thin strips. Cut paneer into thin strips, chop the onions and mince the garlic.

4. Heat 2 teaspoons oil in a kadai (I used olive oil). Fry the garlic for 3-4 seconds. Add the onions and saute for 2-3 minutes. Add finely chopped tomatoes and saute for few minutes.

5. Add the chopped bell peppers and mix well and saute. Add saltpepper powder, cumin powder and mix well.

6. Add paneer strips and saute well for few minutes. Add cilantro leaves and remove from flame.

7. To make fajita, take a warm tortilla and place about 2 tablespoons of prepared filling. Top with some salsa and roll. Serve immediately or pack in tiffin.

Make it vegan: Use tofu strips instead of paneer or use vegetables alone for the filling

Ingredients

  • 6 flour tortillas
  • 6-8 tablespoons fresh tomato salsa
  • For veggie filling:
  • 1/2 green bell pepper cut into thin strips
  • 1/2 yellow bell pepper cut into thin strips
  • 1/2 green bell pepper cut into thin strips
  • 100 grams paneer cut into thin strips
  • 2-3 garlic cloves minced
  • 1 tablespoon tomato ketchup
  • 1 small onion finely chopped
  • 1 small tomato finely chopped
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon pepper powder
  • Salt

Notes

1. Tomato ketchup is optional.
2. You can even use corn tortillas.
3. If using store bought chunky salsa, add to the filling before adding paneer and mix well.
