To make baby corn pepper fry, you will need very few pantry staple ingredients and the best part is no sauce is required for this recipe. I don’t prefer to use store bought sauces unless absolutely necessary and recipes like this pepper fry are my choice.
In this dish, you first fry the flour coated baby corn. Then prepare a quick base with onions and peppers to which you add the fried baby corns.
As you see, you need just few ingredients for this recipe. So use very good quality ingredients for best flavor. I have used sesame oil as we love the flavor. You can use olive in place of sesame oil also.
Next try to use freshly pounded pepper for sharp flavor. For milder flavor you can use white peppercorns too.
How to prep baby corns for this recipe?
As I said above we love baby corn at our home. I don’t buy the peeled and packed ones though. We get really tender and fresh bay corns that are so delicious which I very frequently purchase.
I peel the baby corns and store them in closed box for 3-4 days. For this recipe, you will have to par boil the baby corns in salted water for five minutes.
Can I replace baby corn with any other ingredient in this recipe?
Yes, if you don’t want to use baby corn you can use mushrooms, potatoes, paneer or tofu in this recipe. Just clean, toss the flours and fry as mentioned in the recipe.

How To Make Baby Corn Pepper Fry
Peel the baby corns and remove the feathers thoroughly. Chop them as required.
Bring a big pot of water to a rolling boil. Add salt and turmeric powder. Mix well and add the chopped baby corns.
Blanch for five minutes. Drain and let dry for few minutes.
Combine the blanched baby corns, plain flour, rice flour, salt and pepper powder in a bowl.
Mix and toss well. Do not add water.
Heat oil in a pan. Slide the batter coated corns into the hot oil.
Fry until golden and crispy. Set aside.
Heat 2 tablespoons sesame oil in a pan or wok. Add cumin seeds, chopped onions and saute well till onions turn soft.
Add chopped bell pepper and mix well.
Next add pepper powder and salt to taste. Saute in high flame for 6-7 minutes.
Add the fried baby corns and toss quickly.
Serve with a squeeze of lemon juice.
Some Variations With The Recipe
Along with pepper powder you can add a dash of chili powder or paprika for more spice
Instead of lemon juice you can add 2 teaspoons vinegar towards the end.
For more saucy version you can add 2 tablespoons tomato sauce after sauteing bell peppers.

- 20 baby corns
- 3 tablespoons rice flour
- 1 tablespoon plain flour
- 1/2 teaspoon pepper powder
- salt to taste
- oil for frying
