The crispiness of this bread cutlet comes from sooji/rava coating. Use roasted rava for coating. The other ingredients for this bread cutlet are green chillies,ginger and cilantro leaves but you can also the usual spice powders used for cutlet recipes like garam masala,chaat masala chopped onions in this bread cutlet recipe.

Ingredients
You will need very few simple ingredients for bread cutlet recipe.
Bread slices– You can use any variety of bread for this recipe. I prefer to use white bread as it has a mild sweet taste which is wonderful in this bread snack.
Potatoes– You will need boiled, peeled and mashed potatoes for this recipe. Make sure there are no lumps else the cutlets will break while frying.
If you have any leftover potato fry or dry curry you can use it. You can even use leftover aloo paratha or samosa filling.
Rava– Roasted semolina known as rava or sooji is used for binding as well to give crispy texture to these cutlets. They also add a wonderful flavor.
Other ingredients- The other ingredients needed for this recipe are simple ones like oil, chopped ginger, green chili, coriander leaves & lemon juice. I have seasoned these cutlets with just salt and pepper powder. You can also add a dash of red chili powder or garam masala powder.
How To Make Bread Cutlet Recipe
To begin with making bread cutlet, boil, peel and mash the potatoes. Make sure there are no lumps in the potatoes, mash them well while still hot. Dry roast the rava till aroma wafts out.
Immerse the bread slices in water for 3-4 seconds and squeeze the water completely. Do not soak the bread slice in water for much time, just a quick soak and squeeze out the water.
Take the mashed potatoes and squeezed bread slices in a mixing bowl and add all the other ingredients except oil and rava.
Mix well and make a tight dough. No need to knead, just bring together and form a dough, do not add water. This is the bread cutlet mixture or cutlet dough. It will be a slightly non sticky dough. If the dough is very sticky you can add one more bread or 1/2 cup bread crumbs too.
Pinch the dough into 10 equal sized balls and press slightly and shape like a cutlet. Roll the shaped cutlet over roasted rava.
Heat oil in a shallow frying pan and fry the shaped cutlets in medium flame till golden brown from both the sides. Remove excess oil using a kitchen towel. Repeat the same with all the shaped bread cutlets.
Serve hot with coriander chutney or tomato ketchup.
Variations
Bread veg cutlet recipe– You can add more vegetables like green peas, carrot, cauliflower etc. Boil peeled carrots and green peas along with potatoes. Add boiled green peas, carrot along with boiled potato to a large bowl and mash well. You can also par boil or blanch the cauliflower and mash it too.
Add the moistened bread to this vegetable mixture, season as per taste and make cutlets.
Tofu or paneer bread cutlet– Instead of vegetables you can add 1 cup grated or crumbled paneer. You can also add tofu.
Expert Tips
Type of bread– You can use any type of bread for cutlet. If you want to make it healthier you can use sourdough bread, multigrain bread, brown bread, whole wheat bread. You can even use gluten free bread to make these cutlets gluten free.
Potatoes– Boiled and mashed potato is used for binding in this recipe. If you want to avoid potatoes, you can use boiled and mashed sweet potatoes or even raw bananas or plantain.
Spice powders– I have not added any spice powder in this dish, but you can easily add a pinch of dry mango powder or amchur, garam masala powder, roasted cumin powder, chat masala powder, red chilli powder etc.
Deep frying– If you like, you can deep fry the cutlets instead of shallow frying them. Just use a deep pan and more oil for deep frying.
Toasting Or Baking– Instead of frying you can also bake or use an air fryer to fry these cutlets. Bake or air fry the shaped cutlets at 200 C for 20 minutes.
How To Serve Bread Cutlets
These cutlets tastes wonderful on their own when served hot. These are an excellent evening snack with ginger tea, masala chai or coffee. You can also serve these as after school snack with milk or juice.
Dipping sauces like green chutney mint chutney, tomato ketchup or even mayonnaise will taste good with these.

- Salt
- 3 tablespoons oil

I made it twice first time I made mistake of ignoring the instructions lol. I didn’t squeeze the water out of bread. So the crumbled while frying. Taste was yum though. Next time I corrected my mistake and now the perfect yum. This is my expertise snack in my list of favourites..
