Summer is here which means salads will dominate my meals 🙂 Nothing comforts me like a big bowl of salad made of fresh crispy summer vegetables or sweet fruits. I always like to keep the dressing simple and most of times I just add only salt and pepper 🙂
Today I am sharing a ridiculously easy to make, light yet filling and refreshing salad using avocado and cucumber as main ingredients. Keep these two ingredients as base, you can throw in whatever you like to this bowl and make a delicious salad for yourself. I am sharing few of my favorite variations to inspire you 🙂 Let’s get into the recipe!
About This Recipe
Cucumber avocado salad is a simple summer salad made with ripe avocado and cucumber. Along with those we are also adding chopped onions, fresh cilantro leaves and some slivered almonds in this salad.
The dressing for this absolutely delicious salad is a super simple yet delicious mix of lime juice,raw sugar, minced green chilies, salt and pepper. I have also added some extra virgin olive oil to the lime dressing. Sounds delicious right?
While I serve this salad mostly as a side dish or snack for my family, I love to have this as light summer lunch too. This is a super healthy salad that tastes yummy too.
The base ingredients added here in this avocado cucumber salad recipe are so versatile which means you can customize this salad in many ways.
To make this dish more interesting you can add different fresh herbs, vegetables, fruits etc. To make this salad more filling you can throw in cooked quinoa, millets etc. See my notes in variations for more ideas.

Ingredients
For the salad- The base ingredients you need for this salad are cucumber and avocados. You can use any variety of cucumbers here. While most of the cucumber salad recipes call for salad cucumber or English cucumber, I use whatever I have handy. Local cucumbers I get here are so good and they are organic too, so I prefer to use them.
Next use ripe and creamy avocado for this salad. If you want a super creamy texture you can even mash up the avocado slightly too.
Other than avocado and cucumber I have added some chopped onions, chopped cilantro leaves and slivered almonds for some crunch.
For the dressing- It is a simple dressing with lime juice, sugar, green chilies, salt and pepper. Instead of lime juice you can also use lemon juice.
How To Make Avocado Cucumber Salad
Pick a ripe avocado, cut into half and remove the pit. Dice it into cubes. Next rinse a large cucumber and slice into thick circles or dice it into cubes. You will need 2 cups chopped avocados and 3 cups sliced cucumbers.
Combine the ingredients for dressing a small bowl.
Finely chop 1 small onion. You can use red onion or white onion or even green onion. Also keep 1/4 cup slivered almonds ready. I have used raw almonds but you can also use blanched almonds.
Combine cucumbers, avocadoes, onions in a large salad bowl. Add the dressing and mix well. Taste and adjust salt and pepper if needed. Toss well. Divide the cucumber avocado c salad among three serving bowls. Add slivered almonds and serve immediately.
Variations
Cucumber tomato salad– Along with avocado and cucumber you add 1 cup halved cherry tomatoes to make a summer special cucumber tomato avocado salad
With fruits– To add a sweet touch and more summer vibes to this colorful salad you can add sliced strawberry, peaches, mangoes. For some added crunch you can also add sliced apples, pears etc.
With vegetables– To make this salad more hearty you can throw in grated carrots, beetroot or radish too.
Cucumber avocado salad with greens- Along with the ingredients mentioned here for salad, combine any of favorite salad greens like romaine lettuce, kale or arugula.
Herbs– Instead of cilantro you can use fresh dill leaves or fresh basil leaves too. You could try adding mixed Italian dry herbs for a different flavor.
With Cheese– You can add 1/2 cup grated feta cheese to this salad to add some cheesy touch.
Serving Suggestions
This cucumber avocado salad is a wonderful light meal on its own for hot summers. I mostly have a large bowl of it as lunch or pair it with a toast or smoothie for breakfast.
This is also a wonderful side dish in any lavish spread.
Frequently Asked Questions
If you press it should yield to gentle pressure and peel should be easy to peel. Avocados do not ripe in tree, so you can buy them firm or raw and place on the counter, loosely covered in a brown paper bag and let them ripe. Once they are ripened store them in refrigerator for a day.
Avocados oxidize and discolor very soon after they are sliced open. To prevent this add the chopped avocados to a large bowl and add few drops of lemon juice. Toss well. Cover with a plastic wrap and refrigerate until use. If you do not want to use plastic wrap, just store in a well covered container.
Though most of the recipes call for salad cucumbers or English cucumber, you can any variety really.

1 CUP = 250 ml
Ingredients
- 2 cups avocado diced
- 2 cups cucumber diced
- 1/4 cup onion finely chopped
- 1/4 cup slivered almonds
