This cucumber tomato salad happens almost everyday at my home during summer. We make the best use of cucumber that is in season and with couple of tomatoes, this salad gets prepared in no time.

These summer salads like cucumber tomato salad recipe are so easy to make, no cook and keeps you light and refreshed. You can put together such salads in no time with whatever ingredients available yet they will taste delicious and flavorful.

With just two common ingredients tomato and cucumber, you can build this salad as light or rich you want.

Many a times I vary the dressing but the recipe for tomato cucumber salad I am sharing here is somethings we always come back to.

If you want to make easy salads for summer, this one will be your best starting point. Keeping this as base you can build your salad wit more components, vary the seasoning and dressing. Having said that, this basic cucumber salad is simple best!

This recipe is especially good for hot summer days. You don’t have to swelter in kitchen for long time yet make a good nutritious and delicious side dish.

You can make this salad ahead of time and refrigerate for 2 days. Do note that both tomato and cucumber will leave out juices still the salad will taste yummy. In fact we love this salad chilled.

Cucumbers are what you need to keep you hydrated during summer. It is a mild diuretic and helps in weight loss. Also cucumbers are rich in vitamins and minerals, so vital in our diet.

What Goes In Cucumber Tomato Salad?

Tomato– Ripe sweet tomatoes. You can use halved cherry tomatoes or cubed salad tomatoes as I have used here.

Cucumber– You can use any type of cucumber for this salad. Here I have used crisp and tiny salad cucumbers as I had them handy. But it really doesn’t matter which type of cucumber you use. I have made this salad many times with big Indian cucumber too.

Dressing– The dressing for this cucumber tomato salad here is a very simple, refreshing and light one. It is a flavorful mix of roasted and crushed peppercorns, salt, a pinch of sugar and lemon juice. That’s it, this simple dressing lets the flavor of tomato and cucumber shine through the salad.

How To Make Cucumber Tomato Salad Step by Step

Peel or rinse the cucumber and wipe gently. Cut into roundels.

Rinse and wipe the tomatoes gently too. Chop into small cubes.

Combine chopped cucumber and tomatoes in a salad bowl.

Add pepper powder, salt, sugar and lemon juice.

Toss well. Let sit for 10 minutes. Serve as side dish.

Variations You Can Do With Cucumber Tomato Salad.

Make A Meal Out Of It

If you want to make this tomato cucumber salad a wonderful light meal you can throw in some protein like cubed and grilled paneer, tofu or boiled chickpeas, peanuts in it. For a heartier and more filling salad, add 1 boiled, cubed and roasted potato or sweet potato. You can also add 1/2 cup croutons just before serving.

Avocado Cucumber Tomato Salad

Just cube 1 ripe firm avocado and toss along with other ingredients.

With Feta Cheese

To make this salad more rich and delicious you can add 3/4 cup crumbled feta cheese while serving

With Dill Leaves

One more healthy addition to this salad with cleaned and chopped dill leaves. You can add 1/2 to 3/4 cup of dill leaves in this recipe.

With balsamic Vinegar Dressing

Combine 2 tablespoons balsamic vinegar with 2 teaspoons olive oil. Add this to the salad instead of lemon juice.

With Onion

You can add a chopped onion to this salad for a spicy taste and flavor. Use red onion or white onion or even spring onion greens, chopped.

With mozzeralla

You can add fresh chunks of mozzarella in this salad. Along with cheese add chopped basil, 2 teaspoons vinegar and some olive oil for a delicious Italian flavored cucumber salad.

Tops Tips For Best Cucumber Tomato Salad

Use fresh and tender cucumber that are not bitter. You can taste test a small piece of cucumber before adding to the salad.

Use ripe and sweet tomatoes for best results

You can reduce or leave out the green chilies while making for toddlers and kids.

The salad keeps well in fridge for a day or two.

Ingredients
  

  • 3 salad cucumbers peeled and chopped
  • 3 medium tomatoes cubed
  • 2 very finely chopped green chilies
  • 3/4 teaspoon roasted and crushed peppecorns or pepper powder
  • 2 teaspoons lemon juice
  • salt to taste
  • 1/2 teaspoon sugar
