Fruit cream recipe ingredients are super simple and easily available. Apart from fresh chopped fruits you need just cream, some dry fruits, sugar and flavoring.
Cream– you can use any type of cream for this Indian dessert recipe. Use heavy whipping cream or heavy cream or double cream for a very rich base. I have used amul low fat cream here. It whips well and suitable for this dessert.
Sugar– powdered sugar works best in this recipe. The quantity mentioned here yields a moderately sweet whipped cream. You can increase or decrease the quantity of sugar by 1 tablespoon.
Flavoring– I have kept the flavor simple and classic with plain old vanilla here. But there are so many ways you can flavor this fruit dessert. Please check the variations I have mentioned below.
Nuts– while the fruits and cream are both soft and melt in mouth, nuts provide the crunch and interesting texture variation. You can add any nuts of your choice. Fruits and nuts make for a interesting combination always.
How To Make Fruit Cream Recipe
Rinse, peel and chop the fruits into small cubes.
Refrigerate till use. Combine whipping or fresh cream, cream cheese in a bowl. Add sugar and vanilla in a bowl. I used vanilla bean powder so the color of my base is bit dark.
Whisk or whip until very soft peaks are formed.
Add fruits and prepared cream in alternating layers. You can even simply add fruits, cream and mix well.
Garnish with more fruits and nuts.
Which Fruits Can Be Used For This Recipe?
Use fresh and sweet non citrus fruits of your choice for this recipe. My preferred ones are sweet fruits like banana, ripe and sweet, non fibrous ripe mangoes, sweet strawberries, sapodila, muskmelon, again should be ripe and sweet, apple. few pomegranate pearls
Having said that avoid adding kiwi, orange or grapes (may add a few just as garnish) in this recipe.
Seasonal fruits taste best in this recipe, so go with whatever is local and in season for you to get best results.
Next it is a good idea to taste the fruits before adding to the cream to make sure, they are fresh, sweet and not overly tart. Adding very tart or unripe fruits will spoil the fruit cream by altering the taste and texture.
Can This Recipe Be Made Vegan?
Yes you can easily make fruit cream vegan. Non dairy whipping cream or coconut cream can be used here.
With Ice Cream : To make this dessert even more rich you can use ice cream as base instead of the fresh cream. In that case don’t add any sugar.
Just let the ice cream soften first and whip it very slightly for a minute. Add the fruits, nuts and serve.
Serve fruit cream with a garnish of chopped nuts as I did here for a simplest dessert. You can keep both the whipped cream and fruits separately and mix just before serving.
Add few strands of crushed saffron and rasmalai extract for heady rasmalai flavored base. You can also add few spoons of rabdi if available.
Instead of vanilla you can also add cardamom powder for a desi Indian flavor.
Add in few drops of rose water or even few teaspoons of rose syrup (reduce sugar if you add rose syrup though) to get a beautiful color.
While serving you can throw in some white chocolate shavings.
