I love such easy ice cream recipes that are practically effortless. Whipping the cream and folding the flavo takes just 10 minutes but what you are rewarded with is absolute deliciousness.
Homemade ice creams are just best for kids. You can totally control the ingredients, no preservatives, chemicals etc. Moreover the flavor combinations have endless possibilities too. You can create your own exotic flavors easily at home like this ice cream.
What Do You Need To Make the Recipe?
You first of all need tender coconut, of course 🙂 You want the really soft and thin meat from the tender coconut. Regular coconut used for making chutney or frozen ones cannot be used. The base for this ice cream is my trusted and favorite two ingredients- sweetened condensed milk and cream. As with my all ice cream recipes, I have used low fat fresh cream (Amul) here also. Do check out this strawberry mousse post for details on whipping low fat cream.
You can use coconut extract for more flavor but that is not really necessary when you use fresh and real ingredients. This ice cream has a wonderful subtle coconut flavor and taste.
How To Make Tender Coconut Ice Cream Step by Step
Break open a tender coconut, collect the water and tender meat. Carefully collect the white meat discarding brown fiber.
To a blender jar add the coconut water and tender coconut meat.
Blend to a smooth puree.
Whip fresh cream in medium speed until soft peaks are formed.
Add the sweetened condensed milk and fold gently.
Finally add the coconut puree and mix gently. Add to a freezer safe box and freeze for 8-14 hours.
Scoop and serve tender coconut ice cream immediately.
Can I make this ice cream using an ice cream maker?
Yes, if you have an ice cream maker you can use it for this recipe. Just prepare the base as mentioned in the recipe and chill thoroughly. Transfer to your machine and churn according to the instructions.
Can I make this ice cream vegan?
Yes, to make this recipe vegan just replace condensed milk and cream with 3 cups coconut cream and 1 cup sugar. Instead of sugar you can also use coconut sugar.
Where can I find tender coconut?
In south India tender coconut is very easily available in corners of every street. In US you can get it in Asian markets, whole foods, H marts etc.
Top Tips For Best Tender Coconut Ice Cream
Make sure to chill the fresh cream, mixing bowl and beater hands before whipping the cream
You can increase or decrease the condensed milk by another 1/4 cup as per taste.
Along with fresh cream you can add 1/2 cup coconut cream for flavor.
After transferring to the container place a butter paper and then close with the lid.
After second day the ice cream tends to become a bit hard, you can just thaw it in the counder for 5 minutes before scooping.

- 1.5 cups tender coconut meat tightly packed
- 1 cup tender coconut water
- 1 cup fresh cream
- 400 grams sweetened condensed milk
