What Do You Need To Make Tender Coconut Ice Cream?
You first of all need tender coconut, of course 🙂 You want the really soft and thin meat from the tender coconut. Regular coconut used for making chutney or frozen ones cannot be used. Check this tender coconut pudding recipe to see where you can buy tender coconut outside India. You will need both tender coconut water and very tender meat.
The base for this ice cream is my trusted and favorite two ingredients- sweetened condensed milk and cream. As with my all ice cream recipes, I have used low fat fresh cream (Amul) here also. Do check out this strawberry mousse post for details on whipping low fat cream.
You can use coconut extract for more flavor but that is not really necessary when you use fresh and real ingredients. This ice cream has a wonderful subtle coconut flavor.
