I love sipping on some warm flavored milk during winter evenings. Mildly flavored milk that is not heavily sweetened is actually good for undisturbed deep sleep. If you are not very fond of drinking plain milk then do try out this pista milk for a change.
What Is Pistachio Milk?
Pistachio milk is easy to make flavored milk made with unsalted pistachios, sugar and some vanilla. Use whole milk for richer version and for low fat pista milk you can use skimmed milk.
For sweetener I have used unrefined light brown sugar. You can also use regular sugar, honey, palm sugar or any other sweetener.
For flavor you can use saffron, cardamom powder, vanilla, pistachio extract or a pinch of cinnamon powder. I do not prefer to use essence or color in flavored milk recipes.

How To Make Pista Milk?
Making pistachio milk is easy and quick. Begin with boiling the milk first. Next soak pistachios in hot milk along with saffron for 10 minutes.
Grind the soaked pistachios to a smooth paste along with 3-4 teaspoons sugar. Add the pistachio paste to the boiled milk and simmer for 3-4 minutes. Serve warm 🙂
Can You Make This Recipe Vegan?
For making this pista milk vegan just replace dairy milk with any nut milk like almond milk, cashew milk or non dairy milk like soy milk or coconut milk.
I would suggest using almond milk in this recipe. Just make sure not to boil the almond milk. It has to be gently warmed.

Bring milk to a a boil. Let it become a bit warm
Soak pistachios and saffron strands in 1/4 cup warm milk for 10 minutes.
Transfer to a mixer jar, add sugar and grind to a smooth paste.
Now add this pistachio paste to boiled milk and simmer for 3-4 minutes. Serve warm or chilled.
