Spicy bun recipe- Soft, delicious and flavorful iyengar bakery style khara buns are a top favorite in south India. You can bake these buns very easily at home and customize as you like. Serve these spicy buns or or warm as snack with tea or in breakfast with some salted butter!

This spicy bun or khara bun is all my bringing back a piece of childhood on plate for me. Fresh from the big oven, still hot khara buns tucked in small papers were our regular after school treat along with honey cake, masala toast, butter biscuits, veg puffs, veg rolls, cutlet, coconut cookies 🙂

I recently shared a picture of these spicy buns in my instagram and many of them wanted recipe. So sharing it here with step by step photos.

What Is Spicy Bun?

Known as khara bun or masala bun locally, these spicy buns are simple flour buns studded with onions, green chilies, curry leaves etc. There are many variations you will find with these buns in the bakeries like paneer stuffed bun or potato buns.

These masala buns are very easy and simple to bake at home. You can actually bake these buns even without oven. I have included instructions below, do check out!

What Goes In The Making of Masala Bun Recipe?

As I said above these spicy buns are simple plain flour buns. The main ingredients are flour, yeast, water and select spices. As far the spices you can use as much or less as per your liking.

Usually finely chopped onions, green chilies, cumin seeds and curry leaves are added. I have alsoadded some chili flakes and finely chopped coriander leaves for flavor.

To make these buns healthier you can use whole wheat flour and some grated veggies like carrot, capsicum.

Also to make vegan spicy buns just replace butter with olive oil.

How To Make Khara Buns Without Oven?

To bake these buns on stove top use a pressure cooker. Follow the recipe and prepare the dough, proof it and shape into buns.

Heat a big pressure cooker with a cup of salt for 15 minutes in low flame. In the meantime choose a tray or plate that would fit inside your cooker. Grease the plate and arrange the buns. let it rest till the cooker heats up.

Place a stand or small cup inside the cooker and place the plate with shaped buns. Remove the gasket and weight and close the cooker. Cook in lowest flame for 15-18 minutes. Once the bun is cooked and top tunrs brown, remove from flame, brush with butter and serve.

Serve spicy buns hot with tea as or serve in breakfast with butter and green chutney.

How To Make Spicy Bun Recipe Step by Step

In a bowl combine flour, yeast, salt and sugar. Mix well with a dry spoon.

Add soft butter, cumin seeds, chopped curry leaves, coriander leaves, green chilies and onions. Mix well.

Add water and make a soft dough. Knead well for 5-7 minutes. Keep covered for the dough to raise.

After first raise the dough should have doubled in volume. It will take around 60-90 minutes.

Divide the dough into 8 equal parts and shape each part into ball.

Grease a baking tray and arrange the buns with space between them to raise. Keep the tray covered for 15 minutes for second raise.

In the mean time preheat oven at 180 C / 370 F. Place the tray inside the oven and bake for 15-18 minutes. The top should be hallow and golden brown in color.

Once done, brush the top with butter and serve spicy buns warm.

    You can freeze the leavened dough, thaw and bake.
