This is a no frills easy capsicum rice recipe that I keep going back. The flavor is sharp and clean with minimum seasonings. The flavor is mild and delicate, so this rice is well suited for toddlers and kids also. This will a very good one in their lunchbox.
We love colored bell peppers or capsicum at our home and I most often have them handy. Apart from making aloo capsicum, stuffed capsicum, paneer capsicum masala, I also make chutney, flavored rice and add capsicums in sambar. They taste so delicious and sambar turns out flavorful.
So if you like capsicums too, then this tasty capsicum rice is for you. The best part is you can make this rice in no time that too with leftover rice. Even if you cook the rice freshly, just let it cool down a bit before adding to the sauteed capsicums.
Unlike pulao, this bell pepper rice is very mildly flavored and has that nice crunchy texture from capsicums. I have just used few whole spices for flavor and salt, pepper as seasonings. However you can just keep this recipe of capsicum rice as base and add your flavorings.
How To Do Delicious Capsicum Rice?
To make this bell pepper rice I have used colored bell peppers. You can use whatever colored peppers you have. This rice tastes best with green capsicum alone too.
I have butter for sauteing the spices as it gives more flavor. To make vegan capsicum rice you can easily use any oil.
We begin with heating some butter in a pan. Saute the whole spices well. Next add onions andsaute for few minutes, followed by chopped bell peppers. Add salt, pepper powder and saute in high flame for 8-10 minutes. The peppers should cook yet retain their crunch.
Add the cooked and cooled rice, toss gently. You can add some spring onion greens or chopped cilantro leaves as garnish.
Variations and Tips For Making Capsicum Rice
Cooked and cooled rice works best for this recipe. If you cook the rice freshly, add few drops of oil to it and spread it gently in a large plate. Let cool for 20 minutes and then use in the recipe
Chop the capsicums in uniform size to over cooking
You cam add garam masala powder or chili powder in this recipe if you wish. Add along with or instead of pepper powder.
Along with capsicums you can add boiled peas,corn or chopped potatoes in this capsicum rice.
Finally you can garnish with paneer cubes or even croutons.

Heat a pan with 3 tablespoons butter or oil. Add bay leaf, cloves and cumin seeds. Saute well.
Add finely chopped onions and saute till soft.
Next add chopped capsicums. Add salt, pepper powder and mix well.

- 3/4 teaspoon pepper powder 15 black peppercorns powdered
- 1/4 cup chopped cilantro leaves for garnish
