Easy Peanut Rice For Lunch Box
Variety rice are great time savior for me during weekdays. When I don’t have the time to make elaborate sambar, rasam and vegetable, I quickly make a variety rice with or without vegetables and call it a day 🙂 They are wholesome, filling, easy and delicious.
This peanut rice is my favorite since growing up. I have always loved coconut rice this rice with peanut also has the similar taste and texture. Also I make this extra spicy as we prefer it that way but you can easily change the spice level as per your liking.
I always prefer these variety rice recipes for kids lunch box. My kid prefers only non sticky and non mushy lunch for school and variety rice perfectly fits the bill. I often make okra rice, carrot rice, capsicum rice, masala rice for her. On days when I am out of veggies or need something really quick, this peanut rice, easy pepper rice or cilantro rice is made.
The best part about these variety rice recipes is that they can be made so easily with leftover rice. Though I always cook and cool fresh rice for my kid, if you have good quantity of leftover rice that you need to use up give these variety rice recipes like peanut rice a try. You can also make lemon rice, pudina rice, raw mango rice with leftover rice.
This peanut rice hardly takes 15 minutes once you have cooked and cooled rice at the go. The base of this rice is roasted and powdered peanuts. I also add some lentils and sesame seeds for flavor.
While powdering do not make a fine powder as it will taste like you have mixed just peanut chutney podi with rice 🙂 Make a coarse powder for roasted peanuts and this peanut rice will have an excellent texture just like coconut rice.
The highlight of the peanut rice recipe is its tempering. Like in any south Indian variety rice recipes, tempering plays a major role here too for taste and flavor. Be generous with peanuts, and curry leaves. I also like to add few cashews. They look good and taste great as well.
Serve peanut rice warm or at room temperature. It tastes great at room temperature and a perfect lunch box option. While packing for kids you can add a crispy potato fry if time permits. This rice tastes great with just some chips or carrot cucumber salad too.

Tips For Making Peanut Rice
- Rice- To make peanut rice I like to use regular raw rice ponni or sona masoori. I feel the delicate flavor and taste of basmati rice does not go well with robust flavor of peanuts. Just make sure the rice is cooked with grains separate and not broken. Also the rice should be thoroughly cooled before adding to the sauteed ingredients.
- Oil- Sesame oil please 🙂 I cannot stress this enough, most of the recipes from Tamil cuisine tastes great with sesame oil. The wonderful flavor and slight bitterness adds so much depth. If you don’t want to use sesame oil use peanut or coconut oil and I do not recommend olive oil in this peanut rice recipe 🙂
- Add ons- Along with peanuts I add some urad dal, chana dal and sesame seeds. All these lentils and seeds add wonderful texture and flavor. You can also add grated coconut, some moringa leaves in this recipe.
How To Make Peanut Rice.
Preparation For Peanut Rice
Cook and cool the rice thoroughly. Take the cooled rice in a wide bowl and add few drops of sesame oil to it.
Heat a tablespoon oil in a pan. Add measured urad dal, chana dal, peanuts and sesame seeds.
Coat the ingredients well in oil and fry until they turn golden. Remove to a plate and let the oil remain in the pan.
Once cooled, powder the fried ingredients coarsely.
Making Peanut Rice
Now heat the same oil again and temper with mustard seeds, urad dal, chana dal, sesame seeds, curry leaves, slit green chilies, cashews and peanuts.
Add the powdered peanuts.
Mix well. Saute for 4-5 minutes.
Add the cooked and cooled rice, Also add required salt.
Mix gently.
Serve peanut rice warm or at room temperature.

Peanut Rice
1 CUP = 250 ml
Ingredients
For peanut rice
- 2 cups cooked and cooled rice Or 1.25 cups raw rice, cook and cool well
- 1 tablespoon oil
- 1/4 cup peanuts
- 2 tablespoons urad dal
- 2 tablespoons chana dal
- 1 tablespoon sesame seeds black or white
- salt to taste
For tempering peanut rice
- 1 tablespoon oil
- 1 teaspoon mustard seeds
- 1 teaspoon urad dal
- 1 teaspoon chana dal
- 12 cashews
- 2 green chilies slit
- few curry leaves
