Masala pav is our favorite snack after pav bhaji. I often make this as quick snack for my kid when I have some homemade pav . I always prefer to use homemade pav for pav bhaji,pav sandwich, masala pav recipes.
Basically masala pav is a spicy tasty snack/light meal with soft bread called pav used for pav bhaji. The masala that is served with pav is made with onion, tomato, capsicum and pav bhaji masala.
There are many variations in masala pav recipe. In some recipes mashed potatoes are added to the masala. Here in this masala pav recipe I have just used onion, tomatoes and capsicums.
Just like pav bhaji, the entire masala pav recipe should be made in a flat tava. I made the whole recipe in tava. If you are not comfortable in cooking on tava you can make the masala in a kadai.
Serve masala pav immediately after preparing with finely chopped onions and lemon wedges. Goes best with masala chai.
Masala Pav Ingredients:
Very few ingredients are needed to make masala pav recipe.
The masala is a simple yet flavorful one. You can add some bell pepper along with onions and tomatoes for crunch. In some recipes you will find even mashed potatoes are added but I usually do not use potatoes in this recipe.
Pav bhaji masala powder is the spice powder used for making masala pav. I prefer to use homemade pav bhaji masala powder but you can use good quality store bought one too.
Use butter to saute the masala and also to toast pav. Using oil or ghee is not preferred and it will change the taste.
One ingredient you cannot miss in this recipe is finely chopped raw onions. Serve generous portion of finely chopped raw onions for best flavor and taste.
Recipe Notes and Tips For Best Masala Pav Recipe
Always use butter in this recipe and do not skimp on it.
Use fresh and soft laadi pavs. In the absence of laadi pav you can use dinner rolls or burger buns
Make sure to cook the onions and tomatoes into a very mushy paste that is spreadable.
You can add mashed potatoes for a thick masala but it will change the taste entirely.

How To Make Masala Pav Recipe Step by Step
1. Heat 3 tablespoons butter in a tava. Once the butter melts add finely chopped onions. Saute for 2 minutes.
2. Add ginger garlic paste and saute till raw smell goes off.
3. Add finely chopped bell peppers and saute well for 3-4 minutes.
4. Now add very finely chopped tomatoes and mix well. Add some butter if needed. Saute for 3-4 minutes.
5. Add salt, chili powder, pav bhaji masala powder and sugar. Mix very well. Cook for 1012 minutes till the tomatoes turn mushy and butter is released from sides.
6. Add 1/2 tablespoon butter and mix well. Move the whole masala to one side of the tava.
7. Now take a pav bun and slit in the middle. if you wish you can cut it too.
8. Place the cut pav on the tava and toast well from both sides.
9. Spread some masala inside the pav and close it.
10. Spread some masala on the top too. press well.
11. Toast the pav well on all sides. Repeat the same with remaining pav. Serve masala pav hot.
