We love chaat and street food but as eating out is not always an option I make them at home. In fact making Indian chaat foods like pani puri, bhel puri, sev puri, are easy if you just stock up few things like green chutney, fine sev. Most of the chaat recipes requires less cooking and more assembling.
Moreover unlike common thought, chaat items are not totally junk or unhealthy. For example this recipe has the goodness of white peas, potatoes and when made in hygienic conditions they are not junk.
Coming to today’s recipe, ragda means a a spicy curry made with dried white peas. Patties are just crispy aloo tikkis. The combination of this spicy curry and patties topped with chopped onions, tomatoes and cilantro leaves makes for a very delicious and satiating dish.
This is one of my favorite chaat recipes that I make them at home very often. It is very easy and required very simple ingredients.
We like this chaat more as a dinner or lunch as it very filling and heavy. Few patties and one or two cups of ragda can easily fill you up 🙂

Ingredients You Will Need
Making ragda patties is easy, just you need few ingredients handy. Also it helps if you are stocked up on green chutney, sweet chutney, sev. I always have a batch of green chutney so that making sandwich and chaats are a breeze.

You will need
- Potatoes to make aloo tikki. You can also use veg cutlet or paneer cutlet or burger patties.
- Soaked dried white peas to make ragda. Use dried green peas if white peas are nit available.
- Green chutney
- sweet chutney
- chopped tomatoes
- chopped onions
- fine sev
- cilantro leaves and lemon slices
Though the ingredients list look long, most of them are just used for serving. You can easily use store bought sev here.
How To Make Ragda Patties Step by Step
Making Ragda
1. Soak dried white peas in plenty of water for 6-8 hours.
2. Drain the soaked peas and take it in a small pressure cooker or pressure pan. Pressure cook for 10-11 whistles. The white peas should be thoroughly cooked. Do not add too much water in the cooker. Once the pressure is released, remove the lid and simmer the cooked peas along with water. Add salt, turmeric powder and chili powder. Mix well and cook.
3. In a small pan hat 2 teaspoons oil. Add finely chopped onions. Saute for 1-2 minutes.
4. Add this to the simmering ragda. Mix well. Add little water if needed. Now using a masher or the back of a ladle, slightly mash the ragda. There should be few whole peas here and there.
Set aside the ragda until serving ragda patties.
5. Now to make ragda patties get the other ingredients ready. Chop onions, tomatoes and cilantro leaves finely.
6. Keep green chutney and sweet chutney ready.
7. Prepare aloo tikkis as mentioned here.
How To Serve Ragda Patties?
To assemble ragda patties take a serving plate. Place 2-3 aloo tikks. Pour ragda generously over it. Drizzle sweet chutney, green chutney as needed.
Top with finely chopped onions, cilantro leaves, optional tomatoes and sev. Serve ragda patties immediately.

1 CUP = 250 ml
Ingredients
