Mixed vegetable soup recipe is a healthy and hearty soup that is perfect for monsoon and winters. This soup recipe is a very wholesome and healthy food for growing toddlers and kids. In this soup I have added sweet pumpkin along with other veggies and this addition of sweet pumpkin renders a brilliant color apart from a slight natural sweet taste to this soup. This soup is more of home style and tastes subtle with mild flavors. I have adapted this mixed vegetable soup recipe from Chef Sanjeev kapoor. It is a very easy and simple soup, as most of the work is done by pressure cooker,you just need to blend and simmer the cooked veggies to enjoy this healthy mixed vegetable soup.
I have flavored the soup with cumin and freshly crackled black pepper. This is a vegan soup,instead of butter I have used normal oil,you can use any oil of your choice or of course you can use butter itself. You can use any flavoring of your choice.I have paired this soup here with herb-butter toast and that was an awesome combo,you however can serve with croutons,bread sticks or even any hard crusted bread.This kind of healthy mixed vegetable soup is a boon to any mother who wants to feed veggies to her fussy kid.The appetizing color,slight sweet taste and great favor will surely attract kids and make them have this soup.Even for toddlers,you can introduce various vegetables in the form of soup so that they get accustomed to different veggies.This mixed vegetable soup is also great for weight watchers,as this soup makes a wonderful light meal in itself
Here is how to make healthy mixed vegetable soup recipe with step by step pictures
1.Heat oil in a small pressure pan and saute the garlic cloves.Next add the chopped tomatoes and saute till they shrink a bit.
2.Add the peeled and chopped veggies and saute for 2-3 minutes.
3.Add enough water to cover the veggies and pressure cook for 3 whistles.
4.Drain and puree the veggies,saving the water.
5.Add 1 teaspoon oil in the same pressure pan and saute the freshly crushed pepper-cumin for 3-4 minutes.Now add the pureed veggies and mix well.Add the saved water and boil till the soup thickens.
6.Add sugar,salt and simmer for 5 minutes
7.Adjust seasoning and serve hot.

- 1 large potato
- 1 carrot
- 2-3 pieces sweet pumpkin
- 2 small tomatoes
- 3-4 cloves garlic
- 1 teaspoon cumin seeds
- 1/2 teaspoon black peppercorns
- 1/2 teaspoon sugar
- 2 teaspoons oil
- Wash,peel and chop the veggies into big cubes.
- Chop tomatoes into cubes
- Heat oil in a small pressure pan and saute the garlic cloves.Next add the chopped tomatoes and saute till they shrink a bit.
- Add the peeled and chopped veggies and saute for 2-3 minutes.
- Add enough water to cover the veggies and pressure cook for 3 whistles.
- Drain and puree the veggies,saving the water.
- Add 1 teaspoon oil in the same pressure pan and saute the freshly crushed pepper-cumin for 3-4 minutes.Now add the pureed veggies and mix well.Add the saved water and boil till the soup thickens.
- Add sugar,salt and simmer for 5 minutes
- Adjust seasoning and serve hot.
2.Do not add too much sugar as sweet pumpkin is added
3.Though sweet pumpkin is optional,I highly recommend you try this soup atleast once with sweet pumpkin,it tastes great!
