Peak of summer (April and May) is the mango season in India. During this time we do make many delicious mango recipes apart from savoring them as such.Lassi is a very popular Indian beverage. Apart from classic sweet lassi and salt lassi we do make many different flavored recipes. Mango lassi recipe, kesar lassi, fruit lassi, rose lassi are a few to name. This lassi is is a favorite mango recipe at home that we never miss to have.
Last week I got few requests for this mango lassi recipe. I had my readers ask for thick and creamy lassi recipe with mango that we get in restaurants. There are few tricks for making thick and rich lassi. One thing you can do to get thick mango lassi is to add some malai. You can also add some fresh cream to make thick mango lassi. You can also use very thick hung curd to mango lassi recipe. You can flavor the lassi by adding saffron, cardamom or nutmeg powder. A tiny pinch will go long way. I do not prefer to add ice cubes in my lassi. It will dilute the lassi. I use thoroughly chilled lassi and mango pulp. Once the lassi is made I serve it immediately. If kept for long time the lassi may turn bitter. Do not use sour curd to make mango lassi recipe. The lassi will be sour and texture will not be creamy with sour curd.
To make mango lassi recipe you can use any variety of mango. Make sure the mango is ripe and fleshy. Mangoes that are less fibrous will yield more pulp and more lassi. The color of the lassi will vary with the type of mango. Alphonso or kesar varieties will give deep colored lassi. Adjust the quantity of sugar according to the sweetness of mangoes. You can use sugar, cane sugar or honey to sweeten the lassi.
Serve mango lassi immediately once prepared. Use cold curd and mango for chilled lassi.

Step by step mango lassi recipe
1. Peel and chop the mangoes roughly.
2. Add sugar to the chopped mangoes. Blend thoroughly.
3. Add curd, fresh cream and bled well. Add cardamom powder and blend again. Serve immediately.

- 2 cups curd/ unflavored yogurt
- 1 1/2 cups mango pulp
- 4 tablespoons fresh cream or malai
- Sugar to taste
